Item Análisis calórico de la dieta enteral artesanal del Hospital Vicente Corral Moscoso.2016(2017) Bautista Vélez, Priscila Elizabeth; Guzmán Palacios, María Belén; Aguirre Cornejo, Roberto PaulinoBACKGROUND: The Vicente Corral Moscoso Hospital has been using the Traditional Enteral Diet made with typical ingredients of the region in a 2:1 ratio compare with commercial formulas which represents lower costs for the institution. OBJECTIVE: To analyze the energy density and the percentage of adequacy of macronutrients and measure the calories of the Traditional Enteral Diet which is prepared at the Food Service Area of the Vicente Corral Moscoso Hospital. METHODS: The present study is a descriptive study with a prospective longitudinal cut using quantitative variables which allowed us to calculate the macronutrients, the caloric intake, the percentage of adequacy and the energy density of the Traditional Enteral Diet of the Hospital. The universe was 202 rations of enteral diets corresponding to the period between November 21 to December 20, 2016. The data obtained were entered in the Microsoft Excel 2010 platform for the calculation of nutritional values of the diet and elaboration of tables. The average of the 30 rations was obtained through the statistical program SPSS V.22. RESULTS: The percentage of adequacy of each ration had the following percentages: proteins 85.35%, fats 63.22%, carbohydrates 28.45% and total calories 44.31%. The energy density per serving showed a 45%. CONCLUSIONS: The values obtained showed a deficit of macronutrients and total calories per serving. Octubre 2019 – marzo de 2020(Universidad de Cuenca, 2020-08-18) Heredia González, Melanie Vanessa; Ochoa Díaz, María Emilia; Abril Ulloa, Sandra VictoriaBackground: At least 2.8 million people die each year from diseases related to overweight and obesity. The Global Strategy on Diet, Physical Activity and Health, encourages private companies to adopt responsible practices, particularly with the promotion and commercialization of foods high in saturated fat, trans fatty acids, sugars and salt. In Ecuador since 2013, the ‘Sanitary Regulation of Labeling of processed foods for human consumption’ is in force. Objective: To determine and analyze the components of the nutritional labeling of packaged and processed foods that contain salt and / or fat that are sold in supermarkets in the city of Cuenca in the period October 2019-March 2020. Methodology: It is a descriptive, cross sectional study. The largest and most frequent assistance supermarket chains in the city of Cuenca, Azuay were selected. Photographs of the products containing salt and / or fat were made using a standardized methodology according to the protocol of the International Network for research, monitoring and support for the action of food, obesity and chronic, non- communicable diseases. Results: With a total of 578 products analyzed, the category with the highest percentage was salty snacks with 27.3%. In the sodium content, the indicator with the highest percentage was ̈ Medium ̈ with 50.3%. In fat content, the indicator "Medium" predominated with 49.5%. The 100% of the products contain the nutritional table, 99.3% has a list of ingredients, 0.7% does not and 100% has the nutritional traffic light. Conclusions: On average, the highest percentage of all products was the "Medium" indicator. It is recommended to continue with studies related to the nutritional label; due to there are not enough in Ecuador. Key words: Processed foods. Nutrition Labeling. Salt. Fat. Supermarkets. CELEC-EP, noviembre-diciembre, 2016(2017) Abril Hinojosa, Sandra Karolina; Avila Morales, Johanna Elizabeth; Aguirre Cornejo, Roberto Paulino; Auquilla Díaz, Nancy EulaliaPrincipal Objective Analyze the biosecurity norms during the acquisitions, storage, washing, preparation y distribution processes of de alimentation’s service from the Public Empress CELEC – Central Paute – Molino, 2016. Methodology This research is a descriptive quantitative study, which was made in Ecuador’s electric corporation Empresa Pública – Central Paute – Molino, CELEC – EP, with a universe conformed by 50 people whom work inside the alimentation’s service. To run this project, we applied check list made by ourselves, based in the BPM and the Public’s Health’s Ministry’s manual. The obtained information was analyzed by tabulations made in Microsoft Office Excel. Results By the end of every single step of the process of preparation and alimentation service, we were able to observe that the service presented an accomplishment of 95% in acquirement, 56,5% storage, 86,2% cleaning and disinfection, 69,8% preparation and a 94% in distribution, getting a total accomplishment average of 76,21%, being the biggest weakness the humidity and temperature control, but having a 100% in the electric installations, flues of water, food transportation y personal behaviorItem Análisis de bioseguridad y planteamiento de un plan de mejora en el servicio de alimentación del Hospital Homero Castanier Crespo, Azogues, en el periodo abril – octubre del año 2021(Universidad de Cuenca, 2021-09-16) Peralta Morocho, Diana Patricia; Pizarro Yuxi, Katherine Marilú; Vintimilla Rojas, Daniela AlejandraBACKGROUND: According to the World Health Organization (WHO), there have been 600 million cases of foodborne illness and 420,000 deaths in 2015 caused by them. The main causes were etiological agents of diarrheal diseases; affecting mainly children under 5 years of age, who represent 30% of the number of deaths. In Ecuador during 2019, food and waterborne diseases reached around 19,500 cases. OBJECTIVE: Evaluate the application of Good Manufacturing Practices (GMP) and Biosafety in the Food Service of the Homero Castanier Crespo Hospital, in the city of Azogues, during the period April - October 2021. METHODS: Direct observation, forms, interviews with informants. The data obtained from the qualitative variables were evaluated with a numerical value depending on each situation, and were presented as tabulated tables and graphs with percentages. A rule of 3 was performed with the maximum score and the score obtained after the analysis to obtain a percentage of compliance. For the information processing, the following will be used: the Microsoft Excel 2017 program for the elaboration of the database and the IBM SPSS Statitics 25 program for the presentation of tables and graphs. RESULTS: After preparing the research work, Homero Castanier Crespo Hospital was found to comply 82% with biosafety standards and good manufacturing practices within the Hospital Food Service throughout the entire food chain.Item Análisis del estado nutricional de trabajadores del área administrativa de Colineal y su relación con la calidad de la dieta y actividad física Cuenca - 2023(Universidad de Cuenca, 2024-05-29) Aucapiña Moreno, María Paula; Becerra Gomescuello, Ana Julia; Vintimilla Rojas, Daniela AlejandraIn the last few years, malnutrition has reached levels high enough to be considered worldwide epidemic, being a major risk factor for death. In the workplace, it is essential to determine the nutritional status and its relationship with lifestyle, since these factors play an important role in the work performance of workers. Objective: Analyze the nutritional status of workers in Colineal company administrative area, between 24 and 65 years old and its relationship with the diet quality and physical activity in 2023. Methodology: A quantitative, analytical and cross-sectional study was performed. The project was implemented in the "Carpintería y Tapicería Colineal" among workers of administrative area, with a universe of 50 people between the morning and evening shifts. Results: 64% of the participants belong to male sex, and the most prevalent age range is between 24 and 29 years old. Most administrators, according to their BMI, show a result of overweight, also mentioning that, for the level of physical activity, "walking" predominates in both sexes, and finally, in terms of the quality of diet that prevails, is the one classified as improvable, that is, diet can be improved with a correct nutritional intervention. Conclusions: There is a high percentage of overweight administrative staff, with no cardiovascular risk. It is important to mention that, according to the analysis performed, there is no relationship between nutritional status, physical activity and diet qualityItem Análisis del impacto del tratamiento estético no invasivo para reducción de medidas y peso corporal en pacientes que acudieron a consulta privada en el Centro de Bienestar Integral Bioesthetic Spa en el periodo marzo 2020 a marzo 2022(Universidad de Cuenca, 2024-05-17) Cobos Calderón, Samira Alejandra; Espinoza Moscoso, Sofía Alejandra; Vintimilla Rojas, Daniela AlejandraToday, a variety of non-invasive aesthetic treatments have emerged with the purpose of reducing measurements, which may or may not be accompanied by a healthy and/or hypocaloric diet. In many cases, people who undergo these techniques spend large sums of money on treatments that are not always effective. The aim of this study is to know the impact of the aesthetic techniques and to see if the results are statistically significant. The aim of this study is to analyze whether there are statistically significant differences in body weight and waist circumference before and after having attended the Centro de Bienestar Integral Bioesthetic Spa in the period March 2020 to March 2022. This is a retrospective study in which the medical records of the people who attended the Centro Bienestar Integral Bioesthetic SPA were reviewed. The population consisted of 65 patients who attended private consultation within the established period. It was found that those who underwent non-invasive aesthetic techniques had variations in initial weight and waist circumference and final weight and waist circumference. However, when statistical tools were applied, the results were not considered statistically significant, so this method to reduce measurements is not suitable for people seeking to significantly reduce measurements, either body weight or waist circumference.Item Análisis descriptivo del contenido de micronutrientes y percepción de la importancia de las declaraciones nutricionales de los productos procesados y ultraprocesados en la ciudad de Cuenca, julio - diciembre 2022(Universidad de Cuenca, 2023-01-24) Altamirano Mendieta, Johanna Estefanía; Alvarado Alvarado, Flor María; Abril Ulloa, Sandra VictoriaBackground: The packaging of Processed Foods and Ultraprocessed Products (PFUP), inform about the content of critical nutrients for health, also show claims related to health and nutrition that require analysis. Objective: To identify the nutritional claims of PFUPs and their importance in the purchase and consumption decision of adults in Cuenca. Methodology: A mixed study (qualitative-quantitative) in which 2054 PFUP sold in Cuenca were analyzed. The frequency of nutrition claims in 10 categories of PFUP was identified. The type of legend was determined and the correspondence between these and what was declared in the nutritional table (NT) according to the INFORMAS taxonomy was compared. Twelve adults were interviewed on the perceived importance of the legends for the purchase of PFUP. Results: The PFUP with the highest proportion of statements are beverages, breakfast cereals, bakery and pastry products. The correlation between what is stated and what is reported in the NT is low. People express that the claims can generate misinterpretations and influence on the purchase decision compared to products that do not contain them. Conclusions: Most of the PFUP present nutritional declarations that do not have a good correlation with the real content of the product, which could suggest the analysis of the public policy applied in Ecuador with the objective of including more specific and detailed information on declarations, since this information leads to bad purchasing decisions by consumers.Item Cambio en los hábitos alimentarios y en los estilos de vida en adultos jóvenes debido al Covid-19 en la ciudad de Cuenca, 2021(Universidad de Cuenca, 2023-05-12) Saquicela Ulloa, Steven Mateo; Uyaguari Paucar, Nelson Ismael; Abril Ulloa, Sandra VictoriaFollowing the outbreak of COVID 19 disease in Wuhan - China in 2019, a worldwide health emergency was declared, recommending isolation and social distancing. Several studies report that eating habits, lifestyles and sleep quality of adults have undergone changes as a result of proposals to contain the spread of the disease. These changes may affect the nutritional status of the population in relation to the presence of overweight or obesity, as well as malnutrition, anemia, etc. In several studies conducted in various countries and even in Ecuador, these changes are mentioned as a result of the pandemic. In view of this problem, the objective of this study was to determine the change in eating habits and lifestyle (physical activity, quality of sleep) due to the COVID-19 pandemic in young adults in the city of Cuenca, 2021. An analytical cross-sectional study was carried out using the "snowball" technique for the selection of the sample, in addition, a survey was applied through the Google Forms platform related to eating habits and lifestyles before and during the pandemic. Based on the procedures carried out, it was possible to obtain as results that young adult in the city of Cuenca modified their eating habits and lifestyle due to the Covid-19 pandemic.Item Características alimentarias de las y los adolescentes de colegios matutinos y vespertinos de la zona urbana en Cuenca(2011) Benítez Vidal, Mónica Karina; Palacios Santana, Gicela Monserrate; Jaramillo Oyervide, Julio AlfredoObjective: To describe the food consumption characteristics in adolescents of high schools of morning and afternoon schedules in urban Cuenca. Method and materials: Descriptive study. The sample calculation was based on 38118 students with a 50% probability, of occurrence and non-occurrence, a confidence level of 99%. Identifying 810 cases, for the data gathering. The instrument used was a previously validated questionnaire. The results were analyzed using the SPSS 15.0 Evaluation version Results: 47.2% of students belong to middle adolescence, being 54.1% females. The comparable results between the stages of adolescence showed that men and women in mid-adolescence, omitted more food in the mid morning (6.6% and 4.2%). Consume less milk (24.1% and 27.1%) and bread (22.5% and 23.9%) at breakfast. Drink less juice (14.3% to 15.4%) and eat more salty snacks (18.2% and 12.2%) in mid-morning. Eat more salad (19.6% and 31.8%) at lunch, but the consumption of salad decreases at dinner (11.1% and 15.6%), and consume less juice (13% and 13.3%) and eat more salty snacks (8.2% and 4.2%) in the afternoon respectively. Also we appreciated a higher consumption of unhealthy foods such as; fast food 1 time per week (24.9% females and 17.2% males), and salty snacks 2-3 times per week (22.8% females and 17% males). Conclusion: Middle adolescence is when risky food behaviors appear. Beginning at this age the consumption of nutritious food decreases and the consumption of harmful products increases.Item Características alimentarias de riesgo nutricional en la adolescencia media en la Unidad Educativa Particular Pasos, Cuenca-2022(Universidad de Cuenca, 2023-07-18) Pauta Maldonado, Juan Sebastián; Granda Zambrano, Josette Mariflor; Benítez Vidal, Mónica KarinaBackground: Middle adolescence is characterized as a stage full of psychological changes. Social pressure can have a negative influence creating unhealthy eating habits which can affect the nutritional status of teenagers. The diet at this age is characterized by a high consumption of ultra-processed foods, high in sugars, fats and an insufficient supply of vitamins and minerals. The omission of mealtimes is often used as a strategy to maintain body weight and improve their physical appearance. Objectives: To evaluate the dietary characteristics of nutritional risk in middle adolescence of students of the Pasos Private Educational Unit, Cuenca 2022-2023. Methods: Study with cross-sectional design, descriptive type, non-probabilistic by convenience. The sample is composed of 148 students in total, of which 66 are male and 82 are female. This research was conducted in the Pasos Private Educational Unit, in the urban area of the city of Cuenca, in the province of Azuay. The defined population, was composed of a group of adolescents from 14 to 16 years old from the city of Cuenca, belonging to the Pasos Educational Unit, Cuenca 2022. Results: This research allowed us to know the nutritional characteristics of risk in adolescents from 14 to 16 years old that belong to the Pasos Private Educational Unit.Item Características alimentarias y su relación con el índice de masa corporal en los jubilados del IESS Cuenca, 2012(2012) Malo Ottati, Erika Cristina; Malo Vintimilla, María Lorena; Jadán Jadán, Lauro GonzaloObjective: To describe food consumption characteristic and the relation with body mass index of elderly retired people from IESS Cuenca- 2012. Method and materials: Descriptive study. The sample was 350 people, with a confidence level of 95% and a relation 1,8:1 between women and men respectively; identifying 225 women and 125 men for the data gathering. The instrument used was a previously validated questionnaire; and the results were analyzed using the SPSS 18.00 version. Results: 67,7% were females, the average age is 71,4 years. According to BMI, the 20,3% were normal, 53,1% overweight, 21,4% obesity I, 4,9% obesity II and 0,3% obesity III. 51,4% don’t accomplish the recommended food fractions; at breakfast 73,4% drink milk, 82,6% eat bread/cookies; at lunch 90,3% drink soup, 88,6% main dish, 68,9% salad, 23,4% dessert and 70% drink juice. In the afternoon 42% eat bread and 33% milk; at dinner the most common practice is not to eat food. The meat consumption is 1-2 times per week; 70% don’t eat daily vegetables,78% eat bread and 57,1% eat rice daily; 45,3% have an insufficient consumption of fruits, the most used fat is oil 81,1%, 5,4% eat daily fried food, only 21,2% drink more than 5 glasses of water; 10% daily eat sweetmeats and 44% don’t take dietary supplements.Item Características de la alimentación en personas de la tercera edad. General Aim: Observe the eating behavior and physical activity in 3-4 year old children of the Municipal Child Development Centers of the city of Cuenca (CDIs). Methodology: A mixed study was carried out, the qualitative inductive part was developed through non-participatory observations to preschoolers and their educators, analyzing their eating behavior and physical activity. 9 interviews were carried out with the kitchen staff of the CDIs to explore the practices that influence the eating behavior and quality of the menu. The descriptive quantitative study was carried out using a validated dietary quality questionnaire. Results: It was observed that children at the table behave according to the interaction of educators who use strategies to consume the preparations. It was observed that preschoolers do not comply with the recommendation of physical activity and have a prolonged sleep time after lunch. In the interviews, it was found that each CDI carries their organization, and they modify the menu according to several reasons, some of which provide benefits and other disadvantages. The quality of the menus according to the COMES questionnaire was acceptable to improvable. Conclutions: Preschoolers consume three meal times in the CDIs. For this reason, it is necessary to pay attention to the factors that influence the eating behavior and physical activity.Item Comportamiento en la alimentación y actividad física de preescolares al finalizar un proyecto de promoción de hábitos saludables(2018) Peñaloza Moscoso, María José; Calle Bravo, Carla Karina; Abril Ulloa, Sandra VictoriaBackground: In the preschool stage, the teaching staff and / or the formal caregivers play an important role as health promoters, which will have a short and long term impact. General Objective: To identify the feeding and physical activity behavior of the preschool children at the end of an intervention project to promote healthy habits in the Infantile Development Centers of the Municipality of Cuenca (CDIs). Methodology: A quali-quantitative mixed study was carried out. The qualitative approach was carried out through non-participatory observations to children and to the educators during the days of attendance of the children to the CDIs. In addition, structured interviews were conducted with the food service staff of the CDIs to learn how the children's menu is prepared once a training course within the intervention project has been completed. Structured interviews were also conducted with educators to identify the most useful ludic and audiovisual material to teach children eating habits and physical activity. The quantitative study was carried out through the analysis of the quality of the menu eaten by children in the CDIs. For this study, a validated questionnaire was applied. Result: It was observed that the children's eating behavior depends on the control that the educator has, and it is different in each CDI; so, in some CDIs the children eat in a more relaxed way while in others they scream, hit things, etc. The food staff indicates that they have a similar organization in all CDIs, however, menus are altered for different reasons; this fact brings benefits and disadvantages. The teachers commented that stories and food replicas were within the preferred nutrition material to work with children. On the other hand, the analysis of the menus showed an ACCEPTABLE quality, with the fulfillment of 59%. Conclusions: The majority of preschoolers eat three times of food in the CDIs. In addition, it was observed that the attitude and habits that the educators have at the table influence directly on the feeding behavior of the children at the time of eating. Its relationship with the consumption of ultra-processed foods and levels of physical activity are factors of interest in the fields of nutrition and scientific research. Objective: To evaluate the relationship between body composition, the frequency of consumption of ultra-processed foods, and the level of physical activity among the administrative staff of the Department of Commerce, Human Resources Department, and Financial and Administrative Department of the Centro Sur Electric Company in Cuenca, Ecuador, in 2024. Methods: This cross-sectional analytical study included a sample of 112 administrative adults. The "InBody 270" device was used, along with a food frequency questionnaire adapted to the target population and the short version of the International Physical Activity Questionnaire (IPAQ). Data were processed using SPSS 29.0. Results: Among the study population, 79.46% presented obesity based on body fat mass, 60.71% were within the normal range for fat-free mass, and 75% had a body mass index above the normal range. A low level of physical activity was observed in 40.18% of participants. Additionally, 99.11% reported a high consumption of ultra-processed foods. Conclusions: Body fat percentage and fat-free mass index showed a statistically significant relationship with levels of physical activity. However, the relationship with the frequency of consumption of ultra-processed foods was not statistically significant.Item Conocimientos y actitudes del personal que labora en los Centros de Desarrollo Infantil de dos cantones pertenecientes al Azuay con respecto a la seguridad alimentaria pospandemia 2023-2024(Universidad de Cuenca, 2024-06-04) Sánchez Samaniego, Paula Vanessa; Erraez Guaicha, Zulema Odalis; Zúñiga Carpio, Gabriela AlexandraBackground: chronic malnutrition and food insecurity are serious problems worldwide, especially in Latin America and the Caribbean, where 23% of Ecuadorian children suffer from chronic malnutrition. The COVID-19 pandemic has exacerbated this situation, as evidenced in a study conducted in Child Development Centers (CDI) in Cuenca, Ecuador, in 2018, where 71.4% of children faced food insecurity at different levels. This raises concerns about the impact on the health and development of preschool children, underscoring the need for specific measures to improve the food security of this group. Objective: To describe the knowledge and attitudes of staff working in the CDIs of the two cantons belonging to Azuay regarding post-pandemic 2023 food security. Method: to address this problem, two tools were used: focus groups and semi-structured interviews, with the objective of assessing the knowledge and attitudes of personnel on food safety in the IDCs. We worked with 5 people from each center and the data collected were analyzed using the ATLAS.ti program. The results revealed a low level of knowledge about food safety in both IDCs, with a greater lack in the Cuenca IDC. In addition, attitudes of mistrust and ignorance towards the subject were observed in both centers. The challenges identified include the lack of follow-up to existing food security policies in the two IDCs. In conclusion, a worrying lack of familiarity on the part of staff regarding food security was identified in both IDCs, attributable to a lack of specific education on the topic. This underscores the urgent need to implement training programs and strengthen policy enforcement to ensure a safe and healthy environment for the development of preschool children in these facilities.Item Conocimientos, actitudes y prácticas sobre higiene de alimentos en padres de familia de niños menores de 5 años que asisten al Centro de Salud Tandacatu y a la Fundación Hogar Nueva Esperanza. Cuenca, en el periodo junio-noviembre 2021(Universidad de Cuenca, 2023-06-09) Méndez Mena, Christeel Polet; Parra Nivicela, Jennifer Dallyana; Vintimilla Rojas, Daniela AlejandraIntroduction: Microbiological contamination of food is one of the main causes of childhood diarrhea. Prevention is one of the ways to avoid the development of diarrhea episodes due to poor food handling, in addition to being able to encourage food education promoting good practices and habits in parents and that this influences the overall health of children. Objetive: To determine the knowledge, attitudes and practices on food hygiene in parents of children under 5 years of age in the selected centers. Methodology: Descriptive-cross-sectional study in 109 participants, where the previously validated survey of Knowledge, Attitudes and Hygiene Practices was applied. Results: 74.31% of the participants had knowledge of food hygiene, 82.56% had positive attitudes towards food hygiene, and only 18.4% had adequate hygiene practices, while 81,64 % had inadequate hygiene practices. Finally, there was a direct relationship between the rural area and a higher incidence of poor hygiene practices. Materials and Methods: We developed an action - research evaluation in order to evaluate the knowledge and practices of nursing mothers. The sample comprised 290 nursing mothers who were subjected to a precaps, followed by an intervention through an educational program and finally to a postcaps. All this in order to verify the effectiveness of the program applied. Results: According to the results obtained by participating nursing mothers in the percaps and postcaps evaluation, 49% of the women were between 21 and 25 years old with children in ages between 0 and 6 months (65%). On the precaps 53% of the nursing mothers consider cow milk as a substitute of breast milk, after the postcaps 91% of them manifested it wasn’t a substitute. When they were asked if they had knowledge about certain food products that could affect the production of breast milk, 15% of them answered positively. After the postcaps 100% of women manifested there are no food products that disrupt milk production. On the other hand, 59% of the nursing mothers considered that it was possible to breastfeed while pregnant, after the evaluation this knowledge increased in 37%. 26% did not know the meaning of colostrum and 8% didn’t recommend feeding it. After the postcaps 100% answered they knew the meaning of it and promoting it. During the intervention we motivated the importance of nursing during the children’s development stage. General Objective: To determine the knowledge, attitudes and practices on child nutrition of mothers of children aged 0-2 years attending Paute Cantonal Hospital. Area No. 6. Year 2012. Specific Objectives: 1.-Determine the level of nutrition knowledge of mothers of children aged 0-2 years attending Paute Cantonal Hospital. Area No. 6. through a survey designed. (precaps) 2. - Promote and encourage the importance of proper nutrition during this stage of development, by implementing an educational program with the modality of workshops designed for mothers. 3.-evaluate the level of knowledge of the mothers after the implementation of the educational program through a post caps.4. - Create a cookbook on child nutrition, with an emphasis on nutrition of children of 0-2 years. Material and Methods. - Was designed and validated a survey to determine the level of knowledge of mothers and caregivers. Education Program was designed through workshops on healthy eating. Results.-The mothers significantly improved their knowledge with the application of the workshops, with emphasis on the advantages of breastfeeding, age to start complementary feeding and attitudes regarding complementary feeding.
