Item Modelo para optimizar variables críticas de inventarios en el sector retail de alimentos mediante el uso de diseño de experimentos(Universidad de Cuenca, 2022-11-08) Ochoa Dávila, Damián Xavier; Llivisaca Villazhañay, Juan CarlosCurrently, retail is one of the most dynamic sectors in Ecuador and the world, as there is direct contact with the final consumers, this has evolved with stability in recent years and with great projection for the future. In Latin America in 2017 sales amounted to $1.9 billion, expecting that by 2022 it will reach $2.35 billion. The problem arises in how retail companies relate the variables: arrangement and location of products on a shelf and number of existing branches with the variable response “selling price”, this arises since most retailers are not aware of the impact of these factors on their business. For this reason, a general model based on the experimental design was developed to analyze the relationship of a variable with the mentioned factors in order, to find optimization to maximize retail sales and at the same time to improve the management, inventory processes, association and arrangement of the ítems, for which the design of multivariate experiments was used. The literature review was conducted using the documentary research technique. The analyzed study data were collected from previously conducted academic essays, where they were treated and analyzed using statistical software with its Design of Experiments module where the results were interpreted, which showed that, although individually the arrangement and location of products on a shelf and number of branches of the company are essential to achieve maximum sales in a retail store, the relationship between these two factors does not exist. Likewise, it was shown that the most significant factor was the arrangement of the articles, as opposed to the number of branches, which was possible to show that it is an adjustment factor, which needs to be improved.Item Diseño de un modelo estadístico para la estimación de tiempos de fabricación en la línea de montaje final de cajón de una planta de muebles de madera en la ciudad de Cuenca(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-24) Avila Campoverde, Diana Cristina; Flores Sigüenza, Pablo AndrésThis study aims to design a statistical model for estimating manufacturing times on the final assembly line of drawers at a wooden furniture factory in the city of Cuenca. The research stems from the need to improve production planning using quantitative tools that reduce the error associated with empirical time estimates. The methodology employed is quantitative, based on real manufacturing data. Initially, an ABC analysis was applied to historical demand data for the year 2024 to select representative products for the study. Subsequently, time studies were conducted using direct observation time studies with the zero-time method, recording only the effective processing time at each defined workstation. With the collected data, multiple linear regression models were structured at the product family level, considering physical and design characteristics as independent variables. The results showed a high level of model fit, with coefficients of determination greater than 0.89 for all product families analyzed and mean absolute percentage error values less than 6%. It was also determined that product volume is one of the variables with the greatest influence on manufacturing time. In conclusion, the proposed model constitutes a reliable tool to support production planning and improve operational efficiency in the wooden furniture industry.Item Evaluación ergonómica integral del área de envasado de una empresa de producción de minerales no metálicos, considerando los riesgos asociados a los movimientos repetitivos, la manipulación manual de cargas y posturas forzadas(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-20) Fárez Plasencia, Jhon Walter; Espinoza Hernández, Paulina RebecaThe growing non-metallic mineral processing industry dedicated to the production of cat litter faces significant occupational health challenges due to the physical demands inherent in its production processes. This study assessed ergonomic risks in the packaging area with the objective of identifying biomechanical factors associated with musculoskeletal disorders and proposing an improvement plan aligned with ISO 45001:2018. A cross-sectional descriptive design was conducted involving a population of 20 workers, of whom 18 were evaluated. Validated assessment tools were applied for risk identification and analysis: the Revised NIOSH Lifting Equation for manual material handling; the OCRA Checklist for repetitive upper- limb movements; the REBA method for forced postures; and the MultiGEI model, considering job rotation conditions. The prevalence of musculoskeletal symptoms was determined using the Standardized Nordic Questionnaire. Results revealed a very high risk associated with manual handling of loads up to 30 kg, with a Lifting Index (LI) of 2.01 and a global MultiGEI index of 23.6, classified as critical. Additionally, the automated workstation presented a considerable risk due to repetitiveness (OCRA = 16.5). Low back pain was reported by 94.4% of workers and shoulder pain by 77.8%. Task rotation was found to be insufficient, and the implementation of mechanical aids, ergonomic workstation redesign, and structured active breaks is recommended to mitigate risk and strengthen preventive management within the occupational health and safety system.Item Evaluación de la ambidestreza organizacional: Un estudio realizado en el contexto de la ciudad de Cuenca Ecuador(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-18) Núñez Pérez, Viviana Paulina; Viteri Vaca, Juan Fernando; Barragán Landy, Milton FranciscoThis research evaluates the maturity level of Organizational Ambidexterity (OA) in the manufacturing sector of Cuenca, Ecuador, addressing the companies' capacity to simultaneously manage operational efficiency (exploitation) and innovation (exploration). The methodology was developed in four sequential phases: a systematic review using the PRISMA protocol, sector characterization through critical literature review and CIIU codes, and the design of a measurement model based on the ISO 9001 standard, which achieved high internal consistency. The results, processed through a scatter matrix, place most organizations in the high-performance quadrant. However, there is marked excellence in process control and technology, contrasted by reactive and defensive management regarding disruptive innovation, conditioned by environmental uncertainty and financial constraints. It is concluded that the manufacturing sector has developed a hybrid resilience for survival. The main contribution of the study is providing a validated instrument contextualized for emerging economies, allowing managers to diagnose strategic gaps to ensure long-term sustainability.Item Modelo de interrelación de indicadores de sostenibilidad para la cadena de suministro agroindustrial en la región andina(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-19) Mora Asanza, Oscar Antony; Romero Bravo, Alison Camila; Flores Sigüenza, Pablo AndrésThis paper addresses sustainability as a priority challenge for agribusiness, especially in Andean contexts where supply chains have structural, technical, and organizational limitations that affect their economic, social, and environmental performance. Faced with this scenario, the study is aimed at developing a model of interrelation of sustainability indicators applied to an Ecuadorian agro-industrial organization considered as a case study, in order to support operational efficiency and strategic decision-making. The study adopts an exploratory and descriptive methodological approach, based on the selection, prioritization and contextualized measurement of sustainability indicators, as well as on the structural analysis of their interrelationships. Through MICMAC (Matrix of Cross-Impacts Multiplication Applied to a Classification), the relationships of influence and dependence between indicators were modeled, managing to identify those with greater structural relevance within the system. Likewise, the integration of the results in an interactive digital visualization tool in Python allowed to jointly represent the state of the system, its interrelationships and the exploration of scenarios. The results show that the proposed model facilitates an integrated understanding of sustainability, allows guiding improvement actions based on the potential impact of the indicators and constitutes a methodological tool that can be replicated for agro-industrial organizations with similar characteristics.Item Impacto de la digitalización del proceso de medición de tolerancias de maquinarias en la fabricación de llantas en Continental Tire Andina S.A(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-19) Arce Campoverde, Jeniffer Mishelle; Fajardo Parra, Kevin Fernando; Flores Sigüenza, Pablo AndrésThe Ecuadorian dairy industry is a strategic pillar of the national agri-food system, as it integrates productive chains that generate employment, added value, and a continuous supply of essential goods. However, deficiencies in inventory management and supply planning affect the operational efficiency of companies in the sector by creating imbalances between material availability and actual production requirements. In response to this problem, this study proposes the development of a predictive model for supply requirements based on machine learning and artificial neural networks, aimed at optimizing the management of the general warehouse of a dairy company located in Cuenca. The methodology was structured in three phases: a systematic literature review and initial diagnosis; the construction of the predictive model through the comparison of neural network architectures; and the evaluation of the model under alternative consumption scenarios to analyze its sensitivity and stability, along with the formulation of improvement recommendations. The results show that the hybrid MLPLSTM model improves forecasting performance compared with traditional models, especially in highly intermittent consumption series, achieving an adequate conditional mean absolute error and good generalization. In conclusion, the proposed model provides a technological tool to reduce overstock, prevent stockouts, and strengthen logistics efficiency and sustainability.Item Enfoque estratégico de calidad para conformidad de producto: línea de duchas eléctricas y calentadores de agua de la empresa Juan Álvarez Cía. Ltda.(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-18) Calle Espinoza, Romina Jamileth; Barragán Landy, Milton FranciscoThis thesis aims to strengthen product conformity in the electric showers and water heaters production line of Juan Álvarez Cía. Ltda. through a strategic quality approach. Methodologically, the "Quality Route" was applied using a quantitative approach. Diagnostic tools such as the Pareto Chart identified "Spout Breakage" as the critical defect, accounting for the majority of failures. Root cause analysis determined that non-standardized and unvalidated injection molding process parameters increased process variability. As a solution, an action plan was designed and implemented, resulting in a decrease in the Critical Component Defect Rate (CCR) from 2.76% to 2.03%, representing a 26.45% relative improvement in process quality. It is concluded that product conformity in the case study company constitutes one of the main pillars of the quality management system.Item Nivel de cumplimiento de la Norma ISO 7101:2023 y su incidencia en la satisfacción de los pacientes en hospitales(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-18) Arbito Ayora, Juan Ernesto; Ayala Narea, Joseline Andrea; Barragán Landy, Milton FranciscoThis study analyzes the incidence of compliance with ISO 7101:2023 on patient satisfaction in hospitals in Cuenca from October to December 2025. The research is framed within the growing demand to improve healthcare quality, the need for structured management systems, and the relevance of patient experience as a key performance indicator. A cross-sectional analytical design was adopted and developed in three phases. First, a systematic literature review was conducted using the PRISMA methodology to identify factors influencing patient satisfaction. Second, surveys based on the SERVPERF model were designed and validated to measure patient perceptions in the inpatient area of one public and one private healthcare organization. Third, a checklist based on ISO 7101:2023 was developed and applied to assess compliance, analyze its relationship with satisfaction factors, and compare results between hospitals. The findings showed high levels of patient satisfaction and differences in regulatory compliance between the institutions. However, no statistically significant relationship was identified between the two variables. Therefore, the impact of the standard should be interpreted as a framework for strengthening organizational management rather than as a direct predictor of patient satisfaction.Item Factores de Influencia en la Propagación de Errores en el Proceso de Medición para garantizar la conformidad de producto(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-18) Girón Castro, Bryam Sebastián; Jiménez Faicán, Juan Francisco; Barragán Landy, Milton FranciscoMetrological control is a critical component to ensure product and service conformity, since measurement errors can introduce variability, bias, and incorrect accept/reject decisions. In this context, this research aims to determine the factors that influence the measurement process in order to reduce error propagation and strengthen conformity, through an exploratory study applied to the industrial context of Cuenca, Ecuador. A mixed-method approach was applied, using a cross-sectional design and a multi-case analysis, structured into four phases. Phase 1 conducted a systematic literature review following PRISMA guidelines, supported by bibliometric analysis, to identify grouped Factors (FA) and grouped Methods (MA) reported in scientific evidence. Phase 2 analyzed a historical INEN database on metrological calibrations using statistical tools as R to characterize industrial sectors and demand patterns related to measurement control. Phase 3 implemented a survey among local companies to identify Local Grouped Factors (FAN) and Local Grouped Methods (MAN), revealing the real level of control applied in measurement processes. Finally, Phase 4 integrated the previous inputs using semantic embeddings, transforming textual descriptions into numerical representations to compare similarities, detect gaps, and technically support mitigation strategies. This study provides a replicable methodological framework to diagnose metrological management, prioritize critical factors, and guide concrete improvement actions supported by technical evidence.Item Propuesta de Optimización de Recursos en la Planificación Anual Operativa de la Facultad de Ciencias Químicas de la Universidad De Cuenca(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-18) Mora Barroso, Christian Paúl; Jadán Avilés, Diana CarolinaThe present degree work aims to develop a strategy for resource optimization in the Annual Operational Planning (POA) of the Faculty of Chemical Sciences at the University of Cuenca. Through the analysis of historical data and its subsequent evaluation, the proposed strategy seeks to improve the use of the POA in resource allocation, strengthening decision-making through the application of Operations Research tools from Industrial Engineering, specifically through a goal programming model aimed at optimizing the use of public resources under multiple institutional criteria and real budget constraints. The adopted methodology is applied in nature and follows a quantitative approach, structured in five phases: diagnosis and analysis of the current situation, selection of variables and optimization method, model development, model validation, and implementation recommendations. For the construction of the model, variables related to academic impact, alignment with institutional strategic objectives, efficiency in budget execution, and risk associated with resource allocation were incorporated. The results show that the optimization of budget allocation does not depend exclusively on increasing financial resources, but rather on technical prioritization based on quantifiable criteria, allowing the integration of multiple criteria within a goal programming model. The proposed strategy constitutes a technical and practical tool that contributes to improving operational efficiency, rational public spending, and the sustainability of the POA, supporting more efficient management of institutional resources.Item Diseño de una línea de producción basada en Lean Manufacturing y simulación para la industria ecuatoriana de manufactura(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-19) Echeverría Peña, Mateo Sebastián; Llivisaca Villazhañay, Juan CarlosThis study analyzes and redesigns a horizontal freezer production line in the Ecuadorian manufacturing sector. The integration of Lean Manufacturing principles and discrete-event simulation aims to assess the technical feasibility of implementing a specialized production line under a projected demand growth scenario. The research follows an applied, quantitative, non-experimental approach structured into four phases: current production system diagnosis, specialized layout design under technical, ergonomic and logistical criteria, scenario modeling and simulation using FlexSim software, and comparative analysis through statistical methods. The literature review was conducted following the PRISMA 2020 methodology, ensuring scientific rigor and traceability. The diagnosis revealed operational imbalances and high variability among workstations. Average processing times ranged from 36 s to 84 s. A primary constraint was located at the compressor securing station. Utilization reached values close to 95% and exceeded the system's nominal takt time (79 s). Two specialized layout alternatives were proposed and evaluated through simulation using key performance indicators such as throughput, average system time, workstation utilization, and work-in-process inventory (WIP). Results show significant improvements in flow stability, workload balance, and WIP reduction, particularly in the specialized layout 2. Student's t-test confirmed that differences among simulated scenarios are statistically significant (p < 0.05). Production line specialization, validated through simulation, represents a technically viable alternative. The combined use of Lean Manufacturing and discrete-event simulation constitutes a robust approach for the redesign of manufacturing systems.Item Propuesta de Diseño de un Sistema CIP “Cleaning-In-Place” para la Optimización de la Limpieza de Tanques y Tuberías en una Planta de Producción de Salsas(Universidad de Cuenca. Facultad de Ciencias Químicas, 2026-02-07) López Pinos, Marco Andrés; Velecela Fajardo, Anthony David; Flores Sigüenza, Pablo AndrésThis thesis proposes the design of an automated Cleaning-In-Place (CIP) system to optimize the sanitization process of tanks and pipes in a mustard production line. The project emerged from the identification of operational inefficiencies in the current method, which requires between 2 to 2.5 hours per cycle, consumes approximately 2,000 liters of water, and relies heavily on manual procedures. The proposed design is based on four methodological phases: first, a detailed diagnosis of the existing cleaning process was conducted, identifying critical points such as the lack of recirculation, detergent incompatibility, and dependence on manual operations. Second, technical parameters were established based on Sinner’s Circle, ensuring turbulent flow velocities and precise temperature control. Third, hydraulic calculations were developed to validate the capacity of the existing pump to maintain effective cleaning conditions. Finally, Piping and Instrumentation Diagrams (P&ID) were developed in compliance with ANSI/ISA-5.1 standards, along with specifications for sanitary components made of AISI 316L stainless steel. The results demonstrate the technical viability of the proposed system, achieving a significant reduction in cycle time and water consumption while complying with international food safety standards (ISO 9001:2015, ISO 22000:2018, FSSC 22000:2021). This goal is to improve maintenance indicators for essential equipment during the production process. This suggestion is essential for the company as it seeks to increase the quality of maintenance management, reduce downtime, structure preventive maintenance tasks, and reduce expenses associated with corrective maintenance activities. To achieve this, it is necessary to apply the ABC (Activity-Based Costing) methodology, which allows for the detailed classification and analysis of costs and resources associated with each activity or piece of equipment. In this context, ABC helps identify which machines or processes generate the greatest impact on costs or time, facilitating a more precise approach to analyzing the criticality of current machinery. This allows for prioritizing maintenance and optimization actions on the equipment that truly influences operational efficiency. Therefore, we must focus on the priority equipment to be evaluated in this GMAO (Computer-Assisted Maintenance Management System) design. The development of the computer system, using Visual Basic and Excel, will allow us not only to record all maintenance actions but also to monitor and evaluate maintenance activities online in real time. The ABC help us classify spare parts and their storage, a priori, based on how their role will affect our company's operations. This means that we will order and purchase the order in which these components are stored. The implementation of GMAO and the ABC method will optimize spare parts stocks, reduce inventory costs, and guarantee the most critical and essential spare parts for operational continuity. Likewise, personnel trained in the analysis and use of the system will see improved efficiency in the measurement and evaluation of critical variables.Item Desarrollo de una guía de indicadores para la cadena de suministro en la agroindustria de la región andina: caso de estudio agroindustria de quinua(Universidad de Cuenca, 2025-08-06) Coello Guillén, Daniel Sebastián; Mazón Tenemaza, Jonnathan Oswaldo; Guamán Guachichullca, Noé RodrigoAgri-food supply chains in the Andean context lack an integrated system to measure and assess their environmental, social, economic, and resilience performance. This research proposes a comprehensive indicator guide to serve as a reference model for organizations in this context, providing rural associations with a common evaluation language. The development of the proposed guide followed four stages: (1) a systematic literature review of 543 documents, from which 219 preliminary indicators were extracted; (2) classification and operationalization of indicators by element (sustainability and resilience) and dimension; (3) validation of indicators using a one-round Delphi method applied to a group of 14 experts from the relevant fields, resulting in a refined portfolio of 166 validated indicators; and (4) development of standardized methodological sheets, including formulas, variables, reference scales, and data collection routes. The model guide proposes indicators based on two core elements: sustainability and resilience, each with their respective dimensions. It is designed as a flexible structure, allowing each organization to adjust scales, frequency, and metric scope according to its production context. A demonstration of the guide's application was carried out through a proposed set of indicators, from which a critical subset of 32 indicators was derived, based on the SCOR-DS model (level 1) and the sustainability and resilience elements, aiming to link the various processes within the agri-food supply chain under analysis. The proposed guide strengthens data-driven decision-making and offers a replicable framework to enhance the sustainable competitiveness of agri-food supply chains in the Andean region.
