Esta primera edición de la Tabla de Composición de Alimentos presenta información de los alimentos de producción local y alimentos preparados en la ciudad de Cuenca ubicada en la región andina sur del Ecuador. Los datos sobre la composición nutricional de los alimentos se obtuvieron del análisis de 129 alimentos, crudos y cocidos, de los que no se disponía de información en bases de datos de países vecinos. Los datos presentados en esta tabla han sido generados paulatinamente durante el periodo 2011-2017.
