Item Consumo de licopeno en adultos de la ciudad de Cuenca en el periodo agosto 2022 – enero 2023(Universidad de Cuenca, 2023-02-27) García García, Lourdes Verónica; Gonzalez Romero, Glenda Domenica; Machado Orellana, María GabrielaBackground: Carotenoids are natural antioxidants that decrease the adverse effects of oxidative stress. Within these, Lycopene stands out and has been widely studied due to its positive effects on health, helping to counteract the harmful effects of chronic non- communicable diseases. General objective: To determine the consumption of lycopene in adults from 18 to 64 years old in the urban areas of Cuenca, Ecuador from August 2022 until January 2023. Methodology: a descriptive, cross-sectional and observational study was carried out. The sample size was 384 adults aged between 18 and 64 years of age. They belong to the urban areas of Cuenca, Ecuador. The instrument used for data collection was the previously validated. This was the "Semi-quantitative food consumption frequency questionnaire to determine lycopene intake". Results: A total of 50.3 % reported a low weekly lycopene intake, while 29.7 % reported an optimal weekly intake and 20.1 % reported a high intake. The overall average weekly lycopene intake was 59.5 ± 23.06 SD. Conclusion: Lycopene intake is reduced in more than half of the adult population. The main sources of lycopene consumed were ultra-processed products from tomatoes.Item Creación y validación de un sistema informático multimedia “en línea” para la utilización de los profesionales de nutrición en la consulta y evaluacion nutricional de adultos de la zona urbana, del cantón Cuenca, provincia del Azuay. Año 2014.(2014) Amoroso Espinoza, Fernanda Carolina; Cisneros Cardoso, Ana Carolina; Palacios Santana, Gicela Monserrate; Cobos Cobos, Diego FernandoGoal: To create and validate a multimedia computer system “En Línea” for the use of Nutrition professionals in the nutritional consultation and assessment of adults in the urban area, Cuenca canton, Azuay province. Materials and Methods: We developed a transversal correlation experimental investigation. The sample comprised 29 Nutrition professionals. We applied two interventions, one previous and posterior the use of the multimedia computer system “En Línea”. Results: According to the surveys we obtained the following results: Personal data: In the previous survey no professional achieved an excellent qualification; in the last survey, 28 obtained it. Clinical data: In the first survey 13 professionals achieved a rating of excellent; in the later survey, 28 obtained it. Biochemical tests: In the previous survey 25 professionals include this parameter. In the second, all include it. Anthropometric data: In the previous survey, 5 professionals reached the excellent score. With "En Línea", 26 obtained this qualification. 24-hour recall: In the first survey, 26 professionals apply and calculate the reminder. With "En Línea" all applied and calculated it. Prescriptions: In the previous survey, 8 professionals have excellent rating; with "En Línea" all obtain this qualification. Consultation time: According to the first survey no professional takes less than 30 minutes, 3 take 30 to 60 minutes and 26 delayed more than an hour; with "En Línea", 6 took less than 30 minutes, and 23 took 30 to 60 minutes. With this result we confirm our hypothesis. There are differences in fiber consumption according to sex and age, which can influence the health status of the adult population. The overall objective of this study was to evaluate dietary fiber consumption in adults attending nutritional consultations at the Carlos Elizalde Health Center. A descriptive observational study was conducted on a sample of adults attending nutritional consultations, excluding pregnant women, people with gastrointestinal diseases, and those who consume fiber supplements. A questionnaire on the frequency of consumption of foods containing fiber and the Photographic Food Portion Manual were used to estimate daily fiber intake. Based on these instruments, the average fiber consumption in the study population was determined to be 24.9 g/day. It was observed that men had a higher consumption than women. In terms of age groups, adults aged 22 to 28 had the highest fiber consumption, while the 50 to 64 age group had the lowest intake. Objectives: Identify the relationship between he level of security food and the quality of life in Adults belonging to the neighborhood Great Cove of the Cuenca city. Period 2022- 2023. Methodology: It is a study descriptive, quantitative, worked with a convenience population among 100 people, a questionnaire and a scale were used for the harvest of data in Adults of the ages of 18 to 55 years, population of the neighborhood Great Cove during the period 2022 - 2023. Results: The collection of information through the ELCSA scale and the EQ-5D questionnaire, revealed the level of food insecurity that is affecting the female gender more prevalently and how their quality of life is involved, the more food insecurity the lower the quality of life. life. Conclusion: When there is a degree of food insecurity in the home, people do not usually enjoy a desired quality of life, and female heads of household tend to have a higher incidence of food insecurity.Item Riesgo cardiovascular asociado al estado nutricional en pacientes adultos que acuden a consulta externa de nutrición y dietética - Hospital José Félix Valdivieso – Cantón Santa Isabel-abril a septiembre 2020(Universidad de Cuenca, 2021-06-03) Álvarez Pineda, Valeria Estefanía; Avilés Cusco, Karina Elizabeth; Cajas Palacios, Margarita del PilarOBJECTIVE: To determine the cardiovascular risk associated with nutritional status in adult patients attending the nutrition and dietetics outpatient clinic of the José Félix Valdivieso hospital in the Santa Isabel district, from dates: April to September 2020. METHODOLOGY: Descriptive, transversal and retrospective search to evaluate cardiovascular risk associated with nutritional status in patients attending outpatient visits for nutrition and dietetics. According to the inclusion and exclusion factors, the sample consisted of 95 cases, out of a total of 242 medical records reviewed. The data collection was performed using a digital database in Microsoft Excel 2013. Frequency and association tables were made between the variables and the Odss Ratio was calculated to measure the strength of association. RESULTS: The search population consisted of 95 adults between 19 and 64 years old. The female sex was more predominant with 53,68%. Cardiovascular risk was determined by the waist/height index. It was present in 77,9% of the population. The cardiovascular risk was higher in the male sex than the female sex. It was represented by 43,16% of males. CONCLUSION: The association between cardiovascular risk and nutritional status is positive, since the result of the Odds Ratio corresponds to 5.2, that is, the nutritional status factor is associated with a higher occurrence of the cardiovascular risk event with a 95% confidence interval between 1.79 to 15.17, a value that is significant for the research. Meanwhile, with the abdominal perimeter indicator the association is negative given the 0,47 Odds Ratio results. This demonstrates that the nutritional status acts a protective factor.Item Valoración y análisis del estado nutricional del personal administrativo de la Dirección Distrital 01D05 Nabón – Oña – Salud – 2017(2018) Uguña Solano, Andrea Estefanía; Vintimilla Rojas, Daniela AlejandraToday, overweight is health problems. It has been increasing in the last few years. The higher excessive intake of nutrients compared to a lower expenditure. OBJECTIVE: To value and analyze the nutritional status of the administrative staff in the Health District Office 01D05 Nabón - Oña, through the use and interpretation of anthropometric and dietetic indicators. METHODOLOGY: A retrospective analytical study was carried out. The study involved 30 adult person. Patients were currently working at the administrative department. In order to determine the nutritional status the study must include the assessment and analysis of anthropometric and dietary indicators. It was complemented with the estimation of body fat percentage through bioimpedance. The level of physical activity, type of work and residence with their nutritional status were also related. RESULTS: 57% were women and 43% were men, between 29 to 38 years old. The 77% of the population are above the average weight, most of them are overweight, just like the body fat percentage (64%). The dietary intake is inadequate, consuming excess calories (53%), saturated fats (87%), carbohydrates (64%), sugar and sugary products (93%). While the intake of fiber (97%), protein (67%), unsaturated fats (97%) and water (90%) was deficient. CONCLUSIONS: An inappropriate dietary intake will lead to an inadequate nutritional status. If consumption is excessive, overweight or obesity will be generated. In the future this will be able to initiate chronic degenerative diseases such as the metabolic syndrome, representing higher costs and slow development of the country
