Item Efecto de la aplicación de proteasas exógenas sobre la fermentación y valor nutritivo del ensilado de brócoli(Universidad de Cuenca, 2024-09-27) Aguilar Villa, Fátima Berenisse; Mera Quito, Diana Mercedes; Haro Haro, Andrés NorbertoThe production and consumption of broccoli increases rapidly, generating waste during and after production and manufacturing, waste that in its elimination process generates environmental pollution through aerobic fermentation, generating polluting gases. After selection and before marketing the broccoli, the pieces that do not have the appropriate marketing levels and standards are discarded, waste that could be used in the incorporation of diets for animals of livestock interest. Therefore, the objective of this study was to evaluate the effect of including various doses of an exogenous protease enzyme as a conservation treatment of broccoli. The contents of dry matter, crude protein, crude fiber and nitrogen-free extracts of fresh broccoli were higher (P < 0.05) than broccoli preserved alone and with the inclusion of a protease. The cell wall contents of whole plant broccoli before 45-day preservation were higher than samples preserved with and without inclusion of a protease. Total digestible nutrients and energy values of preserved broccoli showed differences (P < 0.001) in the whole broccoli plant and in the ensiled samples. On the other hand, the quality of the silage was not affected by the inclusion of the protease, however, its assessment did not reach the high-quality parameters, this result is due to the low dry matter content in the conservation process. Therefore, it is concluded that the inclusion of an exogenous protease enzyme can be a suitable additive for the preservation of broccoli up to 45 days of storage
