| dc.description | El presente trabajo de investigación, se ha realizado con el objetivo de dar a conocer la gastronomía que se desarrolla y en algunos casos se desarrollaba en la parroquia Guarainag perteneciente al cantón Paute de la provincia del Azuay. En este estudio se busca recolectar información en base a la alimentación dentro de este territorio con el propósito de dar a conocer las costumbres y tradiciones que existen desde el hecho de comer. Un punto importante es destacar preparaciones que se consideran propias del lugar, las cuales se encuentran presentes en una parte vulnerable de la población, es la memoria de las personas adultas mayores, quienes han visto en el cambio que ha sufrido la parroquia al paso del tiempo. Estas personas fueron parte fundamental para el desarrollo de esta investigación, ellas fueron quienes otorgaron valiosa información con el propósito de mantener viva las tradiciones. | dc.description.abstract | The present research work, has been carried out with the aim of publicizing the gastronomy that is developed and in some cases was developed in the parish Guarainag belonging to the canton Paute of the province of Azuay. This study seeks to collect information based on food within this territory with the purpose of publicizing the customs and traditions that exist from the fact of eating. An important point is to highlight preparations that are considered typical of the place, which are present in a vulnerable part of the population, is the memory of the elderly, who have seen the change that the parish has undergone over time. These people were a fundamental part for the development of this research, they were the ones who gave valuable information in order to keep the traditions alive.
