La facultad se creó el 8 de enero de 2008, con las carreras de Gastronomía y Servicio de Alimentos y Bebidas; e Ingeniería en Turismo. Para la Facultad de Ciencias de la Hospitalidad una formación técnica adecuada debe combinarse con una formación moderna, basada en valores, a fin de que, permita formar profesionales responsables, con una visión abierta del mundo actual y, sobre todo, emprendedores que no se limiten a trabajar profesionalmente para terceros, sino que promuevan sus propias iniciativas comercialmente exitosas. Actualmente cuenta con las carreras de Gastromomía, Turismo y Hotelería; se preocupa porque sus estudiantes tengan una experiencia formidable, por lo que se han suscrito convenios con universidades extranjeras, lográndose numerosos intercambios estudiantiles. Es importante resaltar que, en la facultad, el contacto con la gente y la comunidad es de suma importancia, pues estamos seguros de que es la única manera de alcanzar un desarrollo sostenible, justo y equitativo.

    Patrimonio cultural, museos y visitantes en la ciudad de Cuenca

    The present work is one of the few research investigations into the museums of the city of Cuenca, despite the fact that these are institutions that preserve heritage assets and are also tourist attractions. For this reason, a research program was started to study the perceptions that local, national and foreign visitors have about the six museums in Cuenca. The perceptions expressed in spontaneously written comments by ecuadorian and foreign visitors (91 nationalities) in the visitors’ logs at the museums during the year 2016 constitute vital informational input. Using content analysis, impressions recorded by visitors were examined from a qualitative perspective. The study shows that heritage is perceived as an inheritance, is associated with memory, and above all that its conservation is valued to the extent that the continuity of the exhibit is guaranteed, along with the possibility to save its contents for posterity. There is a romantic trend that underlies the comments: that the museum space is where the past remains immutable, through its exhibition.

    El turista cultural extranjero de museos en la ciudad de Cuenca-Ecuador

    Within the framework of cultural tourism in Ecuador, the article addresses a little-studied topic: the particularities of foreign cultural tourists from museums in the city of Cuenca, their sociodemographic characteristics, evolution of the visits and thematic preferences according to the nationality of the visitor in such a way that these tourists can be identified and characterized, which offers practical consequences for the museums in the city. The research follows a mixed paradigm and it is nourished by the analysis of scientific papers, official data from the Ministry of Tourism of Ecuador and the Visit Book of the museums analyzed that corresponds to the years 2016, 2017 and 2018. The quantitative data related to the visits of the cultural tourist to museums are interpreted from the concepts related to cultural tourism. With the previous corpus, the analysis and comparison of the information obtained was carried out by applying descriptive statistics tools and the SPSS version 23 program. The research establishes the potential demands of the public made up of foreign cultural tourists from museums in Cuenca and the challenges to improve the museography, guidance and attention, specifically of those who are involved with the museum institution and cultural tourism.

    La construcción de la memoria histórica a partir de la élite: la fundación del Museo Municipal Remigio Crespo Toral

    The construction of memory is the theme that summons the most diverse specialists in the social sciences and its relationship with the museum, in the study of a museum exhibition, is what the present work develops. “But who cares about memory and why does it worry?” (Kingman and Salgado, 2000, p. 125). The issue of memory is always linked to interests: most authors agree that it implies forgetting. Therefore, we must highlight in relation to memory a constant game of show and hide, register and delete. What do we intend then with a work on memory and museum, which analyzes a specific museum exhibition? The answer is to introduce ourselves to the permanent opposition: reveal / hide, ignore / evidence.

    Imágenes de ciudad según los visitantes a museos, Cuenca-Ecuador

    The article characterizes the image of the city of Cuenca-Ecuador from the testimonies of visitors to six of its museums. The study is pioneering as there are no previous image works applied to the city. On the other hand, the study is carried out with a source of qualitative information: the testimonies written in the Visiting Books. In terms of application, the work is useful for tourism managers in order to influence the reality of the sector. The findings indicate that Cuenca-Ecuador is perceived by its visitors as a city that is distinguished by its historical-cultural legacy.

    La artesanía del “Panama Hat” y su preservación en el Economuseo Municipal Casa del Sombrero en Cuenca-Ecuador

    The toquilla straw hat inscribed on UNESCO's Representative List of Intangible Cultural Heritage of Humanity is a cultural tourist attraction in the city of Cuenca-Ecuador, known worldwide as Panama Hat. The article reviews the history of the toquilla straw weaving and analyzes the workshops that are given in the Economuseo Municipal Casa del Sombrero, it considers the consequences for the conservation of this tradition, which is close to 200 years of development, of cultural and economic importance, and great tourist interest. Methodologically, the work is inscribed in a quantitative-qualitative vision that identifies and processes pertinent information from academic and scientific articles, analyzes data from official entities by means of descriptive statistical tools, in the light of concepts of cultural tourism. The work establishes the sociodemographic characteristics of the people who enrolled in the workshops, their motivations, the execution or not of what they learned and the expectations of application, thus configuring the perspective for crafts in future study. Young people have little interest of the in the toquilla straw weaving: the socio-demographic characteristics of the people who take toquilla straw weaving workshops are made up of women between 20 and 60 years of age who have this work as a complement to their main economic activity, while the interest among men is marginal.

    Projecting a destination image through Facebook: the role and challenges of destination management organizations

    This study explores how the image of a destination - an intermediate city of South America- is projected by the DMO on the official Facebook page, and how this social networking is managed by the DMO. To this end, 454 posts from the official DMO’s Facebook page over one year, consisting of text, illustrations (photographs, banners, graphics) and videos, were analysed using two approaches, inductive and deductive. Findings reveal that posts mainly comprise places in the city -tourist hot spots- and dismiss activities and people (locals and visitors), which projects the image of a mass tourism destination. Content is mainly informative and not always on tourism-related topics. The pandemic significantly impacted the type of content published during the study period. The DMO fails to project on Facebook a consistent and well-differentiated image of the city. The DMO’s lack of political independence from the local government influences the content and purpose of the publications. The study reflects the impact of social networks on the projection of the image of a destination. It highlights the usefulness of visual resources in tourism promotion and their possible impact on the expectations and motivations of potential visitors. Furthermore, it outlines an approach to assessing the projected image of a destination through social media by categorizing three elements -places, activities, and people- shown in the posts. The current work offers valuable insights to DMOs on social media management strategies, especially Facebook.

    En el turismo cultural se incluye al turismo gastronómico, una de las tipologías más demandadas y valoradas por los viajeros, y actualmente uno de los principales motivadores para el desplazamiento turístico. Conocido también como gastroturismo o turismo culinario, se ha convertido en una de las tipologías más dinámicas y con mayor crecimiento de la industria turística, gracias a que la gastronomía es disfrutada, de una u otra forma, por todos los visitantes. El presente capítulo aborda la relación entre turismo y gastronomía, desde los aspectos conceptuales del turismo gastronómico y sus antecedentes, el contexto general en el que se desarrolla, su oferta, demanda y los retos que afronta el sector. Ubica a la gastronomía como representación de la identidad de los pueblos, oficialmente reconocida bajo la figura del patrimonio intangible por la Organización de las Naciones Unidas para la Educación, la Ciencia y la Cultura (Unesco), y como un sector estratégico para la mejora de la calidad de vida de sus habitantes por la Organización Mundial del Turismo (OMT).
