A sample group of students of the sixth level class was given one hour per day of interpersonal intelligence activities for one month. Among data instruments used for this research were observations, surveys, pre-test, post-test, rubrics, and materials that allowed the obtaining of results. The final results showed an improvement in the students´ speaking skills. The growing demand for gluten-free products has increased interest in bread, a staple food due to its accessibility, versatility, and cultural significance. However, replicating the structure and sensory characteristics of traditional gluten-free bread represents a considerable technical challenge. Thus, pseudocereals represent a promising alternative due to their high nutritional profile. Sourdough fermentation was implemented as a strategy to optimize flavor, texture, and digestibility of the final product. Furthermore, hydrocolloids such as xanthan gum and transglutaminase were instrumental in compensating for the absence of gluten, providing viscoelastic properties to the dough. Through an iterative process of formulation, testing, and adjustments, several bread recipes were developed and optimized using different combinations of flours and hydrocolloids. The need to mitigate certain organoleptically unfavorable notes associated with psyllium and some flours was also addressed through the use of aromatic ingredients and flavor balancing strategies. This work integrates practical experimentation with scientific foundations for the development of a functional and nutritionally enriched food product. This contributes to the development of gluten-free bakery products by proposing innovative alternatives that prioritize both health and sensory acceptance, and demonstrates the potential of new ingredients that respond to diverse needs.Item Drama: a compilation of activities to deal with listening and speaking skills at an intermediate level, EFL classroom(2011) Carrión Muñoz, Sandra Fabiola; Espinoza Carpio, Norma Maribel; Pacheco Salazar, Vicente GuillermoItem The Effects of Using Blogs to Develop the Writing Skill in the EFL Classroom(Universidad de Cuenca, 2023-10-24) Zambrano Tenesaca, Marlon Steven; Pacheco Salazar, Vicente GuillermoDeveloping written proficiency seems to be a challenge for students of English as a foreign language today in part because teachers and students have not paid special attention to this important area of English during the learning process. Unfortunately, the traditional methodologies that have been used in recent years do not help students in the writing process, resulting in a low level of writing by students. For this reason, this research synthesis aims to analyze the effects of the use of blogs on the development of the writing ability of students of English as a foreign language. For this purpose, 15 research papers with a quantitative, qualitative, quasi-experimental and mixed method approach were selected and analyzed to determine if the impact of the implementation of blogs in the classroom is positive or negative for students. The findings reveal that (1) the use of blogs greatly contributes to the development of the Writing skill and that (2) students consider that the implementation of blogs has helped them to improve their writing, and to continue enhancing their Writing skill, they would choose to continue using blogs because it is a modern resource that makes use of digital resources.Publication Flipping the classroom with MOOCs. Sin embargo, debido a la amplia gama de información respecto de grupos focales, se consideró pertinente la necesidad de tener una guía clara para la ejecución de esta técnica en el área social. En este escenario, el objetivo de la presente revisión de la literatura es definir los principios teóricos y criterios esenciales respecto de los grupos focales para proveer, tanto a estudiantes como a investigadores, los insumos necesarios requeridos para la aplicación de esta técnica, al momento de recabar datos. Este estudio se enmarca en la metodología de tipo de revisión bibliográfico descriptivo. The question is whether higher education institutions (HEI) in Ecuador deliver graduates with the competences to provide timely economic, ecological, and sustainable solutions. Additionally, HEIs should prepare graduates to find employment in a society characterized by greater uncertainty, extensive use of information technology, speed, risk, complexity and interdisciplinary work. To face this challenge, universities need lecturers to possess a mix of aptitudes, attitudes, and professional development in teaching, research, and services. Unfortunately, knowledge is sparse about the readiness of their pupils to function effectively in a rapidly changing and increasingly globalized environment. Accordingly, this study uses an explanatory sequential mixed-methods approach to explore the impact of lecturers’ aptitudes, attitudes, and professional development on teaching and student learning at the University of Cuenca. Lecturers’ perceptions about their aptitudes and their attitudes are higher than the students’ perceptions. Faculty representatives believe that untenured lecturers have a better attitude and aptitude than the tenured lecturers. A third part of lecturers have achieved one of the required criteria in research development. Students from biological sciences are more satisfied with their lecturers and the competence development that they receive than the students from social sciences or engineering. Understanding the likely implication of the variables, aptitudes, attitudes and professional development, on the quality of teaching and learning is fundamental for the design and carrying out of educational reforms.Item Role play activities to reinforce the third semester of the conversation class in the English language major(2015) Naranjo Salazar, Olga Marina; Pacheco Salazar, Vicente GuillermoThis research paper offers information, activities, and material to anyone who is interested in applying role-play activities based on Task-based language method (TBL) to help students, English language major, improve their speaking ability. This research highlights the necessity to enhance the speaking skills through strategies which provide learners with plenty of opportunities for oral communication. Role-play is a suitable strategy to improve speaking skills since it gives students the chance to interact with each other in a classroom using language for communicative purposes based on daily life situations. To develop the role-play activities proposed in this project, the TBL method has been considered since it as role-play is centered on students’ interaction. Besides, this method emphasizes on the use of authentic language through meaningful tasks such as problem solving, finding solutions, giving advice, sharing personal experiences, among others. The experiment was conducted in 2011 during the spring semester, and a total of 58 students participated. For the class, a mix of classical teaching using a textbook and instruction via internet using the Moodle software were used in harmony. The impressions and experiences of the students were gathered via a questionnaire and an interview; and analysed through Excel. The students liked the blended approach, were motivated to practice and communicate, learned better and more effectively, and considerably improved their English language skills. Initially, introducing the blended approach meant an additional burden for the lecturer, but, in the end, it considerably facilitated the teaching process. This investigation has been done with an analytical and critical focus in order to observe the effect of a virtual platform in an intermediate business class at the Universidad del Pacífico. It centers on the skills of reading and oral communication (speaking). When creating the activities and assignments for the virtual platform the Constructivism theory was taken into consideration because it encourages students to learn and be at the center of the learning process. The results from the data that was collected along this investigation were put into graphs and tables. Once this was done, the outcome provides a different and up to date strategy for the teachers to use with their students, in turngenerating greater commitment from the people involved in this investigation as well as from the authorities at the university.
