| dc.description | La calidad de la leche cruda constituye un factor determinante para garantizar su inocuidad, valor nutricional y aptitud para el procesamiento industrial. En los pequeños sistemas de producción, esta puede verse afectada por deficiencias en las prácticas de ordeño, higiene y manejo sanitario. El objetivo de este estudio fue analizar las características de la leche cruda para determinar su calidad en pequeños hatos ganaderos de la parroquia Tarqui, Ecuador. Este estudio evaluó la calidad de la leche cruda producida en 56 pequeños hatos ganaderos de la parroquia Tarqui, Azuay, mediante un análisis observacional, descriptivo y prospectivo basado en 112 muestras (dos muestreos). Se midieron parámetros composicionales, microbiológicos (UFC de aerobios mesófilos, E. coli/Coliformes, Staphylococcus spp.) y sanitarios (células somáticas), comparándolos con la NTE INEN 09:2012 y el Acuerdo Interministerial N° 024 de 2024. Los resultados mostraron que la composición fisicoquímica de la leche cumplió en general con la normativa, destacando un contenido graso promedio de 4,41 %. Sin embargo, se detectó agua en algunas muestras (posible adulteración o mal manejo) y valores elevados de E. coli/Coliformes, Staphylococcus spp. y células somáticas, lo que indica deficiencias higiénico-sanitarias y problemas de salud mamaria en el ganado. La leche tiene buena calidad composicional, sin embargo, las deficiencias microbiológicas y sanitarias identificadas evidencian la necesidad de fortalecer las prácticas de ordeño e higiene para garantizar su inocuidad. | |
| dc.description.abstract | The quality of raw milk is a key factor in ensuring its safety, nutritional value, and suitability for industrial processing. In small-scale production systems, milk quality can be affected by deficiencies in milking practices, hygiene, and health management. The objective of this study was to analyze the characteristics of raw milk to determine its quality in small cattle herds in the parish of Tarqui, Ecuador. This study evaluated the quality of raw milk produced in 56 small dairy herds in the Tarqui parish, Azuay, through an observational, descriptive, and prospective analysis based on 112 samples (two sampling rounds). Compositional, microbiological (CFU of mesophilic aerobic bacteria, E. coli/Coliforms, Staphylococcus spp.), and sanitary (somatic cell count) parameters were measured and compared against the requirements of NTE INEN 09:2012 and Interministerial Agreement No. 024 of 2024. The results showed that the physicochemical composition of the milk generally complied with current regulations, with an average fat content of 4.41%, the parameter exhibiting the highest values relative to the minimum required. However, the presence of water was detected in some samples (possibly associated with adulteration or improper handling), along with elevated values of E. coli/Coliforms, Staphylococcus spp., and somatic cell counts, indicating hygienic-sanitary deficiencies and udder health issues in the herds. The milk is of good quality in terms of its composition; however, the microbiological and sanitary deficiencies identified highlight the need to improve milking and hygiene practices to ensure its safety. | |
