| dc.description | Antecedentes: la presente investigación se llevó a cabo para determinar los patrones alimentarios en los habitantes del cantón Saraguro; la unidad de análisis es la familia, responsable del desarrollo de hábitos alimentarios influenciados por factores como costumbres trasmitidas de generación en generación, el lugar geográfico, la disponibilidad de alimentos y la forma de consumirlos. Objetivo: identificar los patrones alimentarios en las familias de Saraguro. Metodología: estudio descriptivo cuantitativo, transversal, dentro del cual el universo está constituido por todas las familias del cantón Saraguro, la muestra fue calculada aplicando la fórmula proporción con universo infinito, obteniéndose 150 jefes de familia y fueron sorteados en el programa EPIDAT 3. Los datos se obtuvieron por medio de encuestas de frecuencia de consumo alimentario y recordatorio de 24 horas. Se utilizó SPSS y Microsoft Excel para crear una base de datos para su respectiva tabulación y análisis. Resultados: El 80% fueron hombres y 20% mujeres con rol de padre y madre, respectivamente. La edad promedio de los encuestados fue 58,8 ± 4,2 años. Más de la mitad de los encuestados, 84,7%, 77,3% y 64% consumen maíz, queso y leche de dos a tres veces por día respectivamente. Las calorías promedio de la muestra estudiada fue 2349,38 ± 419,23 kcal diario. | dc.description.abstract | Background: the present investigation was carried out to determine the food patterns in the inhabitants of Saraguro; the unit of analysis is the family, responsible for developing eating habits influenced by factors such as customs handed down from generation to generation, geographical location, availability of food and how to eat them. Objective: To identify dietary patterns in families in Saraguro. Methodology: This is a quantitative, cross-sectional descriptive study in which the universe is composed of all the families of Saraguro, the sample was calculated using the formula with infinite universe, obtaining 150 heads of family and were drawn in the program EPIDAT 3. The data was obtained by means of food consumption frequency surveys and a 24-hour reminder. SPSS and Microsoft Excel were used to create a database for tabulation and analysis. Results: 80% were men and 20% women with father and mother roles, respectively. The average age of respondents was 58.8 ± 4.2 years. More than half of the respondents, 84.7%, 77.3% and 64% consume maize, cheese and milk two to three times per day respectively.
