Control microbiológico de helados que se expenden de manera ambulante en los espacios públicos de la ciudad de Cuenca

Abstract

The food that is sold in the public road can involve a series of sanitary deficiencies due to the ignorance of Good Manipulation Practices by those who perform such activities, which leads to the transmission of food diseases, constituting one of the main health problems. The objective of this investigative work was to control the microbiological quality of ice creams that are expended in public spaces in the Cuenca city, additional, it was observed the conditions of hygiene in the place where the product is marketed, the stalls in the cadastre selected consist of the Department of Urban Municipal Control Of GAD The type of research it was an observational study of cross-sectional design and descriptive, in which we collected 36 samples of ice cream made with water, the same microbiological analysis was performed according to the norm of Ecuador INEN NTE 706:2005, through the use of 3M Petrifilm™ Plates™. Obtained the results of the analyzed samples, established the limits of contamination and the absence of Salmonella spp. and Escherichia coli, evidencing contamination by total coliforms, Staphylococcus aureus and aerobic mesophiles, the first two parameters being those that exceeded the limit established by the norm. Finally, with the Department of Urban Control of the Municipal GAD of the City, training was given to street vendors on Good Practices of Manipulation, storage and transportation of their products.
