La facultad se creó el 8 de enero de 2008, con las carreras de Gastronomía y Servicio de Alimentos y Bebidas; e Ingeniería en Turismo. Para la Facultad de Ciencias de la Hospitalidad una formación técnica adecuada debe combinarse con una formación moderna, basada en valores, a fin de que, permita formar profesionales responsables, con una visión abierta del mundo actual y, sobre todo, emprendedores que no se limiten a trabajar profesionalmente para terceros, sino que promuevan sus propias iniciativas comercialmente exitosas. Actualmente cuenta con las carreras de Gastromomía, Turismo y Hotelería; se preocupa porque sus estudiantes tengan una experiencia formidable, por lo que se han suscrito convenios con universidades extranjeras, lográndose numerosos intercambios estudiantiles. Es importante resaltar que, en la facultad, el contacto con la gente y la comunidad es de suma importancia, pues estamos seguros de que es la única manera de alcanzar un desarrollo sostenible, justo y equitativo.

An index was developed to measure instability and crisis levels as well as the vector autoregressive models - VAR, cointegration as well as hypothesis tests through vectors. The findings indicate that Ecuador endured a crisis 12 out of 19 years; on the other hand, while the United States entered a crisis, the figures of Ecuadorian tourism improved. Likewise, the GDP’s inverse growth movement influenced the reduction in the number of tourists. Therefore, expenditure capacity decided the touristic destination, not so Ecuador’s internal cost index. Finally, it was proven that the average expenditure of a foreign tourist was reduced across time.Publication Entrepreneurial intention in the students of a public and a private university in Ecuador(2021) Serrano López, Ana Lucía; Andrade Amoroso, Rolando Patricio; Bermeo Pazmiño, Katina Vanessa; Astudillo Durán, Silvana VanessaThe research conducted a comparative analysis of the entrepreneurial intention in the students of two higher education institutions in Ecuador, respectively a public and private university. A total of 1507 students participated in an exploratory survey to verify if significant differences among the students of both institutions exist in the desirability, feasibility, and intention to undertake. Results reveal differences in the elements of intentionality between the two samples of students. Additionally, gender only influences the entrepreneurial intention of the students in the private university and family members affect the entrepreneurial intention of the students in the private and public institutions. The study highlights the aspects that educators should emphasize strengthening entrepreneurship programs.Publication Análisis del sistema turístico de tres ciudades patrimoniales de américa: Cuenca, Cusco y Puebla(2020) Serrano López, Ana Lucía; Farfan Cardoso, Maria Elvira; Rodas Pesantez, Joselyne Estefania; Villafuerte Pucha, Maria ElenaThe Organization of the United Nations for Education, Science and Culture, UNESCO, is an organization that since 1978 has created the list of the heritage of humanity, within it, there are several historical centers that stand out for its buildings, with unique architectural and artistic styles; this research is based on this list and it seeks to analyze the tourist system of three cities declared as cultural heritage of humanity that belong to the American continent, those cities are: Cuenca-Ecuador, Cusco-Peru and Puebla-Mexico. For this analysis, a benchmarking of the cities under study has been chosen. In the first instance, as part of the research gaps, the number of tourists that arrived in the cities in 2016 has been taken into consideration to use them as a starting point for a comparative study of the components of their tourism system (supply, tourist product, infrastructure, tourist facility) and realize why being cities with similar peers have not developed in the same way within the tourist field.Publication The role of coworker support in the relationship between moral efficacy and voice behavior: the case of hospitality students in Ecuador(2017) Xu, Shi; Van Hoof, Hubert B; Serrano López, Ana Lucía; Fernandez Machado, Lucia Beatriz; Ullauri Donoso, Narcisa De jesusThis article explores the relationships among employee moral efficacy, coworker emotional support, coworker instrumental support, and employee voice behavior regarding abusive supervision in the hospitality industry in Ecuador: a high power distance culture. The results indicate that employees’ moral efficacy predicted their voice behavior with regards to abusive supervision and that coworker emotional support strengthened this relation. However, an interaction effect between moral efficacy and coworker instrumental support on voice behavior was not found. This study provides a theoretical extension of the voice literature by introducing the roles of moral efficacy and coworker support, and has practical implications for the hospitality workplace.Publication Estudio comparativo de servicios y tarifas de los establecimientos de alojamiento regulado y no regulado. Caso: Cuenca-Ecuador(Casa Editora del Polo, 2019) Villafuerte Pucha, Maria Elena; Freire Chaglla, Segundo Amador; Serrano López, Ana Lucía; Freire Chaglla, Segundo AmadorThis study aims to respond to the situation of regulated and non-regulated establishments, based on the relationship between the services and the fees charged to guests during their stay. The objective of this research is to perform a comparative analysis of services and rates between regulated and non-regulated establishments through groupings, establishing competition factors in the accommodation system. To achieve this study, a comparative-descriptive scope with a quantitative approach based on a sample analysis is proposed, establishing groupings. It was determined that in regulated accommodation establishments there are situations where services and rates could be established according to the classification and category, this being the differentiation factor. While in the accommodation establishments do not present categories but housing modalities and like rates that in certain cases have variations. It is reported that the situation of regulated accommodation establishments versus non regulated ones is competitive in the fares and services factor, although these two accommodation systems are differentiated by the legality condition.Publication Confirmatory factor analysis of a scale of job satisfaction and organizational commitment among hotel service employees in Ecuador(2022) Astudillo Durán, Silvana Vanessa; Serrano López, Ana Lucía; Muñoz Fernández, Guzmán AntonioThis study has the objective of validating a scale to assess the satisfaction and the organizational labor commitment among the employees of the hotel service of Ecuador. To do this, the Confirming Factorial Analysis with Software AMOS IBM is used. The study was conducted with a sample of 914 employees of the hotel sector of the three main cities of Ecuador: Quito, Guayaquil and Cuenca. The adjustment indices (χ2, GFI, CFI, AGFI, IFI, TLI, NFI χ2/DF and AIC) enable the problems of the satisfaction and the organizational commitment problems to be approached through six dimensions. These dimensions are: satisfaction with the activities, satisfaction with the allowances, satisfaction with professional development, labor implication, labor pride and labor disappointment. The results verify that the instrument is valid and reliable with this dimensionality. The study discusses the possibility of grouping the three first dimensions as if they were endogenous variables in the variable of satisfaction, with the remaining four being grouped as endogenous variables in the variable of organizational commitment.Publication Estudio y aplicación de indicadores turísticos en la oferta y demanda turística por periodos de tiempo en la ciudad de Cuenca - Ecuador(Universidad Central del Ecuador, 2018) Serrano López, Ana Lucía; Freire Chaglla, Segundo Amador; Villafuerte Pucha, María Elena; Serrano López, Ana LucíaThis study is based on the project “Analysis of indicators of sustainability and tourism competitiveness with an impact on the strategies of sustainable management, governance and public policies of the Cuenca canton”, in which an analysis of variables in the tourist offer such as: available places, nights of lodging, guest segment and hotel occupancy, while in the case of demand, indicators such as domestic and foreign visitors ́ behavior, socio-demographic aspects, and most visited places are analyzed. It is proposed a descriptive quantitative me-thodology and a tool for the collection of information, surveys are designed according to the variables of the tourist offer and demand, obtaining in the offer indicator an average response of 95.2%, while in the demand one 46 variables are analyzed with 94.6% responses.Publication Recesión en la ocupación hotelera a partir de tres acontecimientos: terremoto, cierre de aeropuerto, construcción de tranvía. Caso Cuenca (Ecuador)(2018) Serrano López, Ana Lucía; Freire Chaglla, Segundo Amador; Sanmartin Rojas, Iliana Del carmen; Espinoza Figueroa, Freddy EdgarIn Ecuador, tourism represents the fourth income source for exported products, with an unpot of 1433 million dollars at constant prices and it’s the equivalent of 1.5% of the gross domestic product for the year 2016. For this study the Hotel occupation was calculated according to the Eurostat 2012 norm. The evaluation of the three research elements, the results in occupation and lodging were as it follows: 10% less occupation due to the closing of the airport, 6% reduction related to the construction of the tramway and 3% less due to the earthquake. With the first event (the construction of the Tramway) it went down to a 28.1%; with two events (the construction of the Tramway and the construction of the airport) a 22.2% and with the three events it goes down to a 17%; hence the studied events affect negatively the image of the destination.Publication Food Motivations in a Tourist Destination: North American Tourists Visiting the City of Cuenca, Ecuador.(2017) Carpio Álvarez, Santiago Domingo; Pérez Gálvez, Jesús Claudio; López Guzmán, Tomás; Serrano López, Ana LucíaGastronomy has been established as one of the key elements for the promotion and consolidation of tourist destinations. The current aim is to contribute to the scientific literature in the field of the relationship between gastronomy and tourism in Latin America from the experience affirmed by North American tourists in the city of Cuenca (Ecuador). The methodology is based on a questionnaire presented to North American travelers during their visit to the city of Cuenca. The results show the existence of different segments of tourists in relation to their attitude toward the local gastronomy. Three segments are identified, and depending on their belonging to a certain segment, the tourists have different motivations with respect to gastronomy. Finally, the results permit concluding that the levels of satisfaction of the tourists differ depending on their attitude toward gastronomy, identified by the three segments.
