Item Elaboración de un modelo de evaluación para la calidad del servicio en restaurantes en Cuenca(Universidad de Cuenca, 2017) Vivar Mora, Juan José; Barragán Landy, Milton FranciscoThis study aimed at revealing, validating and evaluating the dimensions and variables for the measurement of service quality in restaurants that form part of the database of the Tourism's Ministry in Cuenca-Ecuador that includes luxury restaurants, and restaurants of first, second, third and fourth category. In an initial stage managers, owners, chiefs, and experts in the field were interviewed. Through this qualitative study, several quality variables were identified. These variables were then grouped into six dimensions, which were later validated through surveys and finally pondered under the criteria of competitiveness variables and expectation measurements. The result of this study provided a quality measuring scale that is adapted to restaurants and showed that the SERVQUAL evaluation model is generic and that surveys of companies dedicated to measuring the quality perception is not measured correctly.Item Polifenoles: propiedades antioxidantes y toxicológicas(Universidad de Cuenca, 2017) Valencia Avilés, Eréndira; Figueroa, Iván Ignacio; Sosa Martínez, Erika; Bartolomé Camacho, María Carmen; Martínez Flores, Héctor Eduardo; García Pérez, Martha EstrellaPhenolic compounds are secondary plant metabolites, with various physiological functions. Several chemical structures characterize to these molecules. They are widely distributed and have a high capacity to capture reactive oxygen and nitrogen species associated to the disease pathogenesis. Taking into account these charcacteristics, natural extracts rich in polyphenols can be used for the development of new pharmaceutical, alimentary and cosmetic products. However, it is necessary to ensure the safety of these products by performing toxicity tests. This article describes polyphenols from the chemical point of view, as well as multiple studies that support their antioxidant properties. Additionally, different toxicological methods are discussed, as well as their impact in the determination of the toxicity of natural polyphenolic extracts from plants.Item Modelos estocásticos para el pronóstico de sequías en la microcuenca del río Chulco en Ecuador(Universidad de Cuenca, 2017) Zhiña, Darío; Pacheco, Jheimy; Avilés, AlexDrought is a natural phenomenon that affects both ecosystems and people benefiting from various water services. Anticipate the occurrence of this phenomenon could help to plan and manage water resources in an appropriate way to reduce the negative impacts in urban, agricultural and energy sectors. This study aims to develop drought forecasts six months ahead through the Autoregressive Integrated Moving Average models (ARIMA) and using the standardized precipitation index (SPI) in three time windows. To test the methodology, Chulco river basin was chosen located in Machángara-Paute-Santiago river system south of Ecuador. The results show that the best predictions were obtained for three months ahead when the SPI3 and SPI6 indices was used. This study could be useful for decision makers in watersheds regarding to plan policies and measures appropriate for the management of water resources in times of scarcity of water.Item Alimentación fuera del hogar, consumo y preferencias de la población de Cuenca sobre la restauración comercial(Universidad de Cuenca, 2017) Tosi Vélez, Augusto; Serrano López, Ana LucíaThe objective of this research is to determine the consumption preferences of the population outside the household in Cuenca city and the factors of influence. For which, a sample of 1,000 individuals randomly selected in the Historical Center of the city of Cuenca was selected, all of them older than 16 years of age, with a similar percentage between men and women. A survey was applied, including Eighteen closed questions and two open questions. The results were processed according to sex and age groups. For the analysis, statistics test were applied such as Student t, Anova or Chi square, depending on the attributes of the variables. In conclusion, it has been determined that there is a high level of preference for consumption outside home during the weekends, being the quality of the product and the restaurant the most influential consumption factors intrinsically with consumer factors being more influential the quality of the product and the restaurant.Item Preparation and characterization of catalytic membrane reactors(Universidad de Cuenca, 2018) Pinos, Verónica; Medina, Francesc; Dafinov, AntonCatalytic Membrane Reactors, CMR, are well known because of their versatility to develop various industrial processes. This versatility lies in CMR’s ability to run many functions in a single device. These functions can be filtration, dosage and catalysis. This work proposes four ways to prepare CMRs in interface mode to be tested in environmental remediation. For the preparation of Catalytic Membrane Reactors, commercial Hollow Fiber Membranes made of corundum were used. Palladium, as the main active phase, was synthesized by different methods such as impregnation, sputtering and microemulsion. Moreover, copper palladium alloy nanoparticles were obtained by the polyol route. The reactors obtained were tested in aqueous medium, at atmospheric pressure and low reaction temperatures (< 60°C) in the following reactions: in situ generation of hydrogen peroxide and phenol oxidation. The best results were achieved with the CMR with palladium prepared by impregnation. The others CMRs showed fast deactivation in all tests.
