    Aplicación del sistema de categorización LanguaLTM como herramienta de estandarización descriptiva de la “tabla composición de alimentos de Cuenca, Ecuador”

    The LanguaLTM tool is a thesaurus developed to classify and describe different types of food products. It is used worldwide and enables the exchange of food composition data between different regions of the world. This thesis work is oriented towards the application of the LanguaLTM categorization system in order to standardize foods of Andean origin that are presented in the 2018 edition Food Composition Table of Cuenca, Ecuador. In addition, a standard protocol was developed for the categorization of foods of local origin, facilitating the coding of 129 foods. The results obtained evidenced limitations in some foods of traditional Ecuadorian cuisine and regional food patterns were found. Systematization facilitates the communication of data between platforms in an international manner, promoting food sovereignty and optimizing the creation of food policies. The implementation of this methodology improves the efficient and accurate interpretation of nutritional information in the country.

    Optimización experimental de un método cromatográfico HPLC-DAD para el análisis de polifenoles en frutas

    The aim of the present study was to develop and optimize a HPLC-DAD method for the analysis of polyphenols in fruits. For the experiments, standards of nine phenolic compounds were used, initial runs were performed with conditions based on scientific papers. Method optimization was carried out by using a factorial design, followed by a central composite design and a desirability test to determine the influence of the variables flow rate, column temperature and acidification of the mobile phase on the response variable efficiency. Through the optimization tests, the optimal chromatographic conditions proposed by the models were determined. Next, the optimized analytical method was applied on lyophilized mango samples extracted by a method developed utilizing literature review. In the factorial design, a low adjustment of the model was observed and the variable acidification of the mobile phase was not significant. There was an adjustment improvement with the composite central design. A heterogeneous influence of the variables analyzed on the chromatographic efficiency was demonstrated. The desirability test proposed the optimal conditions of 0.64 mL / min for the flow rate and 29.1°C for the column temperature, this proposal was of little applicability for practical reasons. At last, a final method of 43.5 min was obtained at the optimal wavelengths of 254, 280 and 320 nm. Chromatograms with resolved peaks were obtained for mango samples with an acceptable variation (4.4 - 7.6% CV), denoting the applicability of the optimized method and the utility of the extraction method. In the samples, 4 out of 9 phenolic compounds analyzed were identified and quantified. On the other hand, the need for corroboration of analytical recovery and application of the method in other matrices was observed.

    Variabilidad en la composición de quesos artesanales expendidos en los mercados de la ciudad de Cuenca

    Considering the growing demand for the consumption of artisanal and local products, such as cheeses, and the lack of nutritional information about them, the objective of this study was to evaluate the variability in the composition of artisanal cheeses sold in the markets of the city of Cuenca (Mercado 10 de Agosto, Mercado 9 de Octubre, Mercado 3 de Noviembre, Mercado 27 de Febrero, Mercado 12 de Abril, and Mercado el Arenal) through a cross-sectional descriptive observational study. Samples were collected by random sampling and then proximal content and salt content analyses were carried out. The analysis of the data obtained was performed using descriptive statistics. As an example, the data obtained were classified under the nutritional traffic light system used in Ecuador, as well as the octagonal system of Chile. Although the composition data show little variation among them, it is observed that they were categorized in different groups within each nutritional labeling system. These variations are attributed to the diversity in the elaboration processes, to the variability in the composition of the main raw material, which is milk, and to the conditions of conservation, which are factors that significantly influence the final composition of the product. The results obtained are important to know the variability in the composition of these products, and in this way, to establish new sampling plans and recalculate the sample size to obtain reliable results in future studies.
