    Propuesta de menús equilibrados para los niños que asisten a los centros municipales de desarrollo infantil del cantón Cuenca y capacitación culinaria al personal de nutrición

    The present work aims to strengthen nutrition in Municipal Child Development Centers (CDMI) in the Canton of Cuenca by providing daily care of about 600 children in ages from six months to five years. The proposal of menus includes not widely used Regional and Andean products that contain a high nutritional value such as quinoa and amaranth. By applying a different way of cooking these products, they would look palatable to children. To provide healthy nutrition is also necessary to apply and provide a suitable process for food handling and food security to the nutrition staff. By giving training on these issues, we ensure and guarantee an adequate nutrition to enrich children health.
