(Universidad de Cuenca, 2023-09-19) Matute Lucero, Mery Judith; Procel Guallpa, Erika Patricia; Palacios Tamayo, Estefanía Priscila
The recent agri-food heritage in Ecuador can be understood as a new connotation to the denomination agri-food heritage. That implies that the gift associated with food is more than only culinary tradition based on recipes, also it considers the farmers' practices and knowledge during the whole process of production that directly accomplices food safety. To this end, agroecological production is presented as a way of guaranteeing healthy food in public policies. In this way, the agro-food heritage is conceived as a project to be promoted as part of the intangible cultural heritage to contribute to the country's child malnutrition problem. In this context, this research studies the agri-food heritage in Gualaceo, linked to agroecological activity, and analyzes how it is managed by the municipal government to ensure food security for the population. From the approach of political ecology and post-development, it is possible to approach the subject of discourses and practices from which it is possible to understand farmers-authority relations. There it is focused that agroecological production implies a series of ancestral knowledge and practices in harmony with nature, where the result is agricultural products that are frequent ingredients of traditional recipes that have symbolic value and are nutritional. Hence the importance of supporting this dynamic that implies producing healthy food for healthy eating.
