Abstract

Cuenca is a city that has developed faster in the province of Azuay in tourism and is so today, has become a focus of attention for Ecuadorians and foreigners who come to the city in search of meet their churches, colonial architecture, and taste the delicious flavors of the Andean region of Ecuador; turn The cuisine of Cuenca, is the sign of their culture reflected in the products that people use, the cooking techniques, and presentation of the food. This monograph is based on the analysis of supply and demand tourist and gastronomic level of the city of Cuenca since the joint study of these factors to determine the current market realities of tourists and visitors to level the canton.
