Las panaderías tradicionales del barrio de Todos Santos que se mantienen a través del tiempo

Abstract

Cuenca, beautiful city that was declared by UNESCO as Cultural Heritage of Humanity in 1999, we find in it a traditional neighborhood called Todos Santos, which has played a fundamental role in the history of how our beautiful city was forged, since in it was developed one of the most important trades that would mark the life of the cuencanos in the course of time as is the trade of the bakery. In this work bibliographic research will be carried out on the history of the neighborhood of Todos Santos that will guide us until we reach our objective, which is the collection of information on the existing traditional bakeries that have lasted during the time in this place, with the elaboration of bread in wood oven, and in this way transmit the knowledge obtained to the population from Cuenca so that it does not lose its cultural identity. Finally, it will conclude with the compilation of the information obtained from the memories that citizens keep regarding the subject, this being a fundamental part to narrate what happened over the years and relive longings that will be reflected in this work to make known to future generations. As well as recipes collected from some traditional breads dating from many years ago that continue to be prepared today.
