dc.descriptionEl presente proyecto de investigación se orientó hacia la elaboración de mermeladas y jaleas no convencionales con base vegetal, con la integración de pectina obtenida de cáscara de frutas, con el propósito de aumentar el contenido de fibra soluble en conservas que carecen de este componente nutricional. Las materias primas utilizadas fueron la remolacha (Beta vulgaris L.), el pepino, (Cucumis sativus L) y el ruibarbo (Rheum Rhabarbarum), mientras que las cáscaras de las frutas aplicadas para la petina fueron la manzana roja (Malus domestica), el limón tahití (Citrus × latifolia) y la naranja (Citrus × sinensis). La investigación partió del estudio de las propiedades organolépticas, fisicoquímicas y características pertenecientes a todos los insumos de materia prima utilizados para la elaboración de estas conservas. Posteriormente, se realizó el proceso de extracción de pectina mediante la hidrólisis ácida, aplicada de dos métodos: el primer método con precipitación natural y el segundo con precipitación en etanol del 98%; con la finalidad de conseguir fibra soluble de las cáscaras en las formulaciones finales. Los productos obtenidos fueron presentados a un panel evaluador conformado por miembros de la comunidad universitaria incluyendo a los tribunales académicos quienes demostraron aceptación a las conservas; por lo que, finalmente se desarrolló un recetario vinculado a repostería y confitería nacional con la presencia de las conservas elaboradas.
dc.description.abstractThis research project was oriented towards the production of non-conventional plant-based jams and jellies, with the integration of pectin obtained from fruit peels, with the purpose of increasing the soluble fiber content in preserves that usually lack this nutritional component. The raw materials used were beetroot (Beta vulgaris L.), cucumber (Cucumis sativus L) and rhubarb (Rheum Rhabarbarum), while the fruit peels applied for the pectin were red apple (Malus domestica), Tahiti lemon (Citrus × latifolia) and orange (Citrus × sinensis). The research was based on the study of the organoleptic, physicochemical properties and characteristics belonging to all the raw material inputs used to produce these preserves. Subsequently, the pectin extraction process was carried out by acid hydrolysis, applied by two methods: the first method with natural precipitation and the second with 98% ethanol precipitation; to obtain soluble fiber from the husks in the final formulations. The products obtained were presented to an evaluation panel made up of members of the university community, including the academic tribunals, who demonstrated acceptance of the preserves; therefore, finally, a recipe book linked to national pastries and confectionery was developed with the presence of canned products.
