Estudio de factibilidad para la creación de un restaurante de comida rápida saludable en la parroquia Ricaurte, cantón Cuenca

Abstract

The objective of this degree work was to analyze the feasibility of creating a healthy fast food restaurant in the Ricaurte parish. In this context, the work focused on healthy fast food, since it is an innovative gastronomic concept today, focused on offering fast, healthy and highquality food. To do this, a methodology with a mixed approach was used, initially a mapping of the existing fast food restaurants in the area and their menus was carried out. With this information, interviews were applied to the owners of the restaurants to know the supply, demand and competition, in the same way surveys were applied to the possible potential demand of the Ricaurte parish to know the tastes, preferences and level of acceptance of a healthy fast food restaurant. Subsequently, the Canvas model was developed, which, through the analysis of its nine factors, allowed the identification of the viability of the restaurant and the search for a solid position in the market. Finally, through the application of financial indicators, a NPV of $2356.96 and an IRR of 19% were obtained, which indicates that the project is feasible and viable in the Ricaurte parish.
