    Revalorización y rescate de la gastronomía tradicional del cantón Cañar mediante la recopilación de recetas, ingredientes y métodos de cocción

    This research project has been carried out with the purpose of creating a proposal to revalue the gastronomy of the Cañar canton through the investigation of the main dishes and ingredients, recipes, techniques and cooking methods and the analysis of sociocultural problems. Regarding the methodology used in the project, the qualitative method was used. An investigation was carried out in bibliographic sources specialized in traditional, ancestral and patrimonial gastronomy, in addition, emphasis was placed on the recovery of representative ingredients and dishes. With this objective, conducted the respective interviews with connoisseurs of gastronomy and the Cañari tourism. The first chapter includes the study of customs, traditions and festivities of the Cañaris peoples. Similarly, through the observation, recording and photography proceeded to document the features culture of the town, which allowed us in chapter two, to make a compilation of recipes, ingredients, methods and cooking techniques. Subsequently, the shortcomings for the current decline of the Cañari gastronomy. Which are analyzed in the third chapter, Once the proposal is presented with its guidelines to follow as possiblesolution to stop the deterioration of the Cañari gastronomic wealth.
