This study focused on analyzing the situation of innovation in higher education in tourism through a systematic review of literature. The objective was to analyze the innovation processes in higher education in the field of tourism after the Covid-19 pandemic. This study used an analysis based on the PRISMA (Preferred Reporting Items for Systematic Review and Meta-Analysis) method to perform a systematic literature review (SLR) based on Scopus databases. As a result, a theoretical reflection on the study was obtained, as well as the bibliometric analysis of 20 documents from 2019 to 2024. Trends in innovation in higher education and tourism were also identified as a line of research. It was concluded that Covid-19 was a trigger for disruptive innovations. Profound changes in higher education in tourism occur slowly and depending on the educational systems, which shows that it is necessary to break the academic bubble and integrate into real scenarios of tourism activity. Thus, innovation in tourism education has an incremental nature, lately focused on the implementation of artificial intelligence.
