    Guía de bebidas típicas representativas de la sierra centro y sur Ecuatoriana y su maridaje con platos típicos de esta zona

    This proposal highlights six Ecuadorian typical drinks in the Andean Region, which in our opinion are some of the most representative drinks of the questioned areas. In the first part we have made a bibliographic and historical study about these drinks to get an idea of their possible origin, conducting interviews and visiting places where these drinks are considered to be part of their culture and customs, and where probably these drinks are originally from. At the same time we made an analysis of the composition of each beverage based on the knowledge about the process of elaboration obtained from interviewees, and also conducting an analysis of the ingredients each drink is composed of. In the third part we structured a guide in which most of the present work is enclosed; including in it the history of each drink, its process of making, and the places where we can taste them. Finally we made a gastronomic marriage with these drinks and some of the typical dishes, which was examined by the Gastronomy School of the University, getting their satisfactory approval.
