    Propuesta de Diseño de un Sistema CIP “Cleaning-In-Place” para la Optimización de la Limpieza de Tanques y Tuberías en una Planta de Producción de Salsas

    This thesis proposes the design of an automated Cleaning-In-Place (CIP) system to optimize the sanitization process of tanks and pipes in a mustard production line. The project emerged from the identification of operational inefficiencies in the current method, which requires between 2 to 2.5 hours per cycle, consumes approximately 2,000 liters of water, and relies heavily on manual procedures. The proposed design is based on four methodological phases: first, a detailed diagnosis of the existing cleaning process was conducted, identifying critical points such as the lack of recirculation, detergent incompatibility, and dependence on manual operations. Second, technical parameters were established based on Sinner’s Circle, ensuring turbulent flow velocities and precise temperature control. Third, hydraulic calculations were developed to validate the capacity of the existing pump to maintain effective cleaning conditions. Finally, Piping and Instrumentation Diagrams (P&ID) were developed in compliance with ANSI/ISA-5.1 standards, along with specifications for sanitary components made of AISI 316L stainless steel. The results demonstrate the technical viability of the proposed system, achieving a significant reduction in cycle time and water consumption while complying with international food safety standards (ISO 9001:2015, ISO 22000:2018, FSSC 22000:2021). This solution represents a significant improvement in operational efficiency, personnel safety, and regulatory compliance, positioning the company with a competitive advantage in the Ecuadorian agro-industrial sector.
