    Efecto de los factores transporte, alojamiento y manejo sobre la calidad de la carne de cerdo

    The objective of this study is to evaluate the effect of transport, accommodation and management factors on the quality of pork, for which the data of 450 animals that arrived at the municipal slaughterhouse of Cuenca (EMURPLAG-EP) were analyzed. To carry out this study, the density in m2 /animal and in kg/m2 of transport vehicles, as well as the housing pens, was measured. Skin contusions and pH of the meat were also valuated, the rest time and analysis of hazards and critical control points during slaughter were determined. The density variables were found within normal parameters, with a mean in trucks of 0,53 m2 /animal and in pens of 1,37 m2/animal, also the Preslaughter waiting time was 14,5±1,99 hours, being higher than the recommended values. It was evidenced that 100% of the animals showed contusions, and the main affected area was the loin, the most common type of skin lesion was linear, and regarding size bruises prevailed with sizes between 2 and 5,9 cm. When evaluating the final pH of the meat, it was found that 46,9% presented a PSE (Pale, Soft, Exudative) meat while 9,8% presented a DFD (Dark, Firm, Dry) meat. However, no significant association was found between pH and density, rest time and bruises. In conclusion, the quality of the meat was not affected by the variables studied, and may be related to other factors.
