    Elaboración de macerados con hierbas, especias y frutas con base en un licor artesanal de taxo (Passiflora mollissima)

    The purpose of this intervention project is to enhance the taxo fruit (Passiflora mollissima), a fruit that is within the Andean region of Ecuador, seeking to revalue the fruit with a new gastronomic proposal by applying the maceration technique to a base liquor, in this case vodka, which allows generating a new liquor focused on the taxo and from it generating new macerations with fruits, spices and aromatic herbs typical of Andean gastronomy, each of these liquors will be evaluated for five, ten and fifteen days to determine which of them is viable for tasting and cocktail preparation.
