    Análisis de la innovación del sector turístico de restauración en la ciudad de Cuenca

    The purpose of this work is to know what innovation activities are applied by the catering sector of the city of Cuenca, for this purpose the classification suggested by theOECD (2005) hasbeenusedinthe OSLO manualthat subdivides into categories; innovationinproducts, marketing,processes andorganization, and identifies whether the changes made were incremental or radical. This research has a quantitative approach based on a statistical analysis with a probabilistic sample, using stratified random sampling, and descriptive with the use of observation tools that allow to establish a relationship between innovation and competitiveness. A survey was used as a research method that was answered by the administrative staff and managers of the enterprises, being able to obtain information on the management of innovation in all tour areas. The results achieved make visible the benefits that a company has after introducing innovation, in addition to the relationship between the type of innovation applied and the level of economic growth and quality.
