    Guia gastronómica de los platos tradicionales de la provincia de Loja

    This research is focused on the development of a gastronomic guide where it will be evidenced which are the typical and representative dishes of the Province of Loja in order to provide traditional knowledge of the elaboration of native recipes and their culture. For the fulfillment of the objectives, a field work has been carried out visiting each of the cantons where interviews and surveys were conducted to the native people and gastronomic establishments of the sector. The main characteristics of each canton were also investigated, such as geographic location, climate, agricultural production, and tourist attractions. The results of the intervention project are presented with a description of each canton, in which the most current gastronomic establishments are displayed. visited and a gastronomic map of the province of Loja, information updated to the post COVID 19 reality, resulting in a complete guide to the province.
