    Our research topic is focused on the development and maintenance of six masses mothers from a sourdough made with rye and its application in bread baguette, peasant, panettone and bread, the same to be made with different types of leavening, such as industrial and natural fresh yeast, active dry yeast, instant yeast, malt pulque and to observe its evolution and progress to pass the time.
