    Calidad fisicoquímica de la leche cruda que ingresa a la ciudad de Cuenca, para su comercialización

    The consumption of cow's milk in the city of Cuenca is very high, making this food in one of the most used in our society. For this reason you should do research on their physicochemical properties as improper handling brings a loss quality of the same. The purpose of this study was to determine the physical and chemical quality of raw milk entering the city to its commercialization. This 93 raw milk samples were taken at the entrances to the city with the highest influx of traders from the same which are: Tarqui, Sayausí and Barabón. Being Tarqui entry with increased livestock production 69 samples were collected in two weeks , while entries Sayausí and Barabón to be areas with lower livestock production 12 samples were collected from each zone . All this sampling and analysis was conducted during the June and July 2013. For sampling was counted with the support of the Ecuadorian Agency for Quality Assurance Agro " AGROCALIDAD " analysis of the collected samples was performed at the Laboratory of Food " MSV " owned by Dr. Sandra Guaraca and Laboratory Food Science, University of Cuenca. The physicochemical parameters were analyzed to determine the quality of raw milk are established by the NTE INEN 9: 2012: Relative Density , Fat Content , Titratable Acidity , Total Solids , Solids Not Fatty , Proteins , Reaction Protein Stability , Presence Neutralizing , Presence of Antibiotics.
