    Características alimentarias de las y los adolescentes de colegios matutinos y vespertinos de la zona urbana en Cuenca

    Objective: To describe the food consumption characteristics in adolescents of high schools of morning and afternoon schedules in urban Cuenca. Method and materials: Descriptive study. The sample calculation was based on 38118 students with a 50% probability, of occurrence and non-occurrence, a confidence level of 99%. Identifying 810 cases, for the data gathering. The instrument used was a previously validated questionnaire. The results were analyzed using the SPSS 15.0 Evaluation version Results: 47.2% of students belong to middle adolescence, being 54.1% females. The comparable results between the stages of adolescence showed that men and women in mid-adolescence, omitted more food in the mid morning (6.6% and 4.2%). Consume less milk (24.1% and 27.1%) and bread (22.5% and 23.9%) at breakfast. Drink less juice (14.3% to 15.4%) and eat more salty snacks (18.2% and 12.2%) in mid-morning. Eat more salad (19.6% and 31.8%) at lunch, but the consumption of salad decreases at dinner (11.1% and 15.6%), and consume less juice (13% and 13.3%) and eat more salty snacks (8.2% and 4.2%) in the afternoon respectively. Also we appreciated a higher consumption of unhealthy foods such as; fast food 1 time per week (24.9% females and 17.2% males), and salty snacks 2-3 times per week (22.8% females and 17% males). Conclusion: Middle adolescence is when risky food behaviors appear. Beginning at this age the consumption of nutritious food decreases and the consumption of harmful products increases.

    Creación y validación de un sistema informático multimedia “en línea” para la utilización de los profesionales de nutrición en la consulta y evaluacion nutricional de adultos de la zona urbana, del cantón Cuenca, provincia del Azuay. Año 2014.

    Goal: To create and validate a multimedia computer system “En Línea” for the use of Nutrition professionals in the nutritional consultation and assessment of adults in the urban area, Cuenca canton, Azuay province. Materials and Methods: We developed a transversal correlation experimental investigation. The sample comprised 29 Nutrition professionals. We applied two interventions, one previous and posterior the use of the multimedia computer system “En Línea”. Results: According to the surveys we obtained the following results: Personal data: In the previous survey no professional achieved an excellent qualification; in the last survey, 28 obtained it. Clinical data: In the first survey 13 professionals achieved a rating of excellent; in the later survey, 28 obtained it. Biochemical tests: In the previous survey 25 professionals include this parameter. In the second, all include it. Anthropometric data: In the previous survey, 5 professionals reached the excellent score. With "En Línea", 26 obtained this qualification. 24-hour recall: In the first survey, 26 professionals apply and calculate the reminder. With "En Línea" all applied and calculated it. Prescriptions: In the previous survey, 8 professionals have excellent rating; with "En Línea" all obtain this qualification. Consultation time: According to the first survey no professional takes less than 30 minutes, 3 take 30 to 60 minutes and 26 delayed more than an hour; with "En Línea", 6 took less than 30 minutes, and 23 took 30 to 60 minutes.     Estado nutricional e intervención dietética al personal administrativo de la Coorporación Eléctrica del Ecuador (CELEC EP) Unidad de Negocio Hidropaute. Julio 2014- enero 2015

    Nutrition is the prime determiner for health as well as the physical and mental performance in each individual. OBJECTIVE: Determine the nutritional state and perform dietary intervention for the administrative personnel of the Electrical Corporation of Ecuador – Hidropaute METODOLOGY: A quasi-experimental uncontrolled study was conducted from july 2014 to january 2015, comprised of 58 people between the ages of 20 and 64. The weight and height of each person was taken at the beginning, during, and at the end of the study to classify the nutritional state, in accordance with the parameters indicated by the World Health Organization, and surveys were conducted regarding food consumption in various periods to determine the preference and dietary habits of the individual. Based on the results of the study, a healthy nutritional proposal was developed in accordance with the necessities of the population. Physical exercise was also promoted three times a week in the company’s installations grounds as complement to the diet, which includes dance therapy, soccer, and basketball. RESULTS: The percentage of the initial normal weight was 51.7% and finally 65.5%; the excess weight in the initial stage was 33.3% and after the intervention, it was diminished to 24%; the obesity level 1 dropped from 11.6% to 10.5% and finally the obesity level 2 of 1.7% dropped to 0%, demonstrating the effectiveness of the treatment. CONCLUSION: The dietary intervention along with physical activity gave favorable results in the weight of the participants and in their dietary habits

    Evaluación de los laboratorios utilizados para la carrera de Nutrición y Dietética de la Universidad de Cuenca y propuesta de implementación y/o mejoramiento"

    Goal: Evaluate the laboratory of the School of Nutrition and Dietetics at the University of Cuenca, and development of the proposed implementation and / or improvement. Materials and methods: In a descriptive design was laboratory evaluation of the Career of Nutrition and Dietetics, School of Medical Technology, Faculty of Medical Sciences of the University of Cuenca. It created a rating scale for general and complete laboratory, considering a scale on a maximum score of 108 equal to 100%, with the equivalence of excellent (91-100%), very good (81-90%), good (71-80%), requires modifications (60-70%) and serious deficiencies (<60%). We considered six parts in the check sheet for laboratory evaluation being the following: External factors, Cleaning Supplies, Kitchen Areas, Infrastructure, accident prevention area, and availability of equipment. Similarly in the surveys to teachers of the chairs of the career similar study evaluated criteria. Besides surveys applied to teachers who use the lab for specialty materials. Results: The 55% is the overall rating and total laboratory scale ranking of shortcomings, and therefore raises an improvement plan. The 57% of the applied enucleates believe that the laboratory is to Anthropometry implemented, these proposals help to get accreditation from the study career, considering that accreditation is a "seal of quality" that helps the Higher Education Institution to communicate to society its commitment to quality

    Evaluación e intervención nutricional en los niños de la Escuela Fiscal "Padre Juan Carlo", de la parroquia Sinincay del cantón Cuenca, durante el año 2011

    This investigation has enabled the assessment and nutritional intervention in children from Public School "Padre Juan Carlo" of the Parish Sinincay, Canton Cuenca in the period from June to November 2011. For this we perform a descriptive investigation and action research. The nutritional status of the students was assessed by body mass index and compared with growth charts from the Ecuadorian Ministry of Public Health, applied knowledge and practice survey on food. The intervention was proposed based on the results obtained through participatory workshops and educational videos; eventually applied the knowledge and practice surveys to determine the results of the investigation. The assessment of nutritional status are: 81.7% of children had a normal weight, overweight 6.1%, 3.7% obese and 8.5% underweight. With the nutrition intervention achieved its objectives, reflected in: good knowledge increased 26.3%, decreased 17.7% regular knowledge, and elimination of the awareness bad. Good dietary practices increase at 53.1%, reducing 38.5% regular practices and poor 14.6%. Overweight was reduced to 4.88%, 7.93% underweight, normal weight increased to 83.54, and obesity remained, and these results were delivered to the school authorities.

    Evaluación nutricional a niños(as) del Centro de desarrollo infantil solidario 27 de febrero y capacitación a sus padres, Cuenca 2010

    BACKGROUND In the city of Cuenca there are seven supportive childcare centers which are conformed by approximately 74 children each one. They were put into a research process to evaluate the nutritional status of all the children. The objectives of this research project were: to evaluate the nutritional status, to apply the nutrition surveys to the parents in order to know about the food handling of the children and also to train the parents in order to improve the growth and development of the boys and girls with problems. METHOD For the nutritional evaluation the following indicators were used P/T, T/E and P/E. We compared the results obtained with the body mass indicator (IMC) and a dietetics survey. RESULTS Applying the indicators, we obtained the following percentages: 55% are normal, 21% have chronic malnutrition, 15% have chronic and acute malnutrition, 6% have acute malnutrition and 2% have chronic malnutrition with overweight. The IMC reflects that 68% of the children are normal, 19% have mild malnutrition, 4% have moderate malnutrition, 7% are overweight and 2% have obesity. The results found in the weekly and weekend intakes demonstrate that there is an excess of proteins and calories and a deficit of fats and carbohydrates. This training allowed the parents to strengthen their knowledge. This study provides evidence which demonstrates that chronic malnutrition is still affecting our country.     The present investigation has as objective to determine the nutritional state of the children that attend the Center of Municipal Infantile Development “El Cebollar” of the Cuenca city, by means of indicative anthropometrics and practical alimentary; to qualify the parents through educational events to promote healthy alimentary habits, in the period from December to June of the 2010; the information was gathered making a dietary history to the children's 59 representatives; that later on was summoned to different trainings. In the anthropometric evaluation we find: with Anthropometric indicators relation, in the Stimulation area 43 children normal and 57% current malnutrition; with Mass Corporal Index 43% of normality and 57% of light malnutrition. In the Maternal 1 to Pre-basic “B” areas: With Anthropometric indicators relation, 37 normal%, 19% sharp malnutrition, 15% chronic malnutrition, 13% chronicle-sharp malnutrition, 10% overweight, 2% obesity 1, 4% serious obesity; with Index of Corporal Mass, 52 normal%, 19% light malnutrition, 8% moderate malnutrition, 6% serious malnutrition, 9% overweight, 2% obesity 1, 4% serious obesity. Analyzing practical alimentary we mention that weekly contribution of calories and macronutrients distribution of week and weekend existing an unbalance,that is related with the obtained nutritional state directly. In the educational events we obtained 64% of non appropriate knowledge and 36% previous appropriate to the training; post training there was 8% of non appropriate knowledge, 92% appropriate.     Evaluación nutricional a niños(as) del Centro de Desarrollo Infantil Solidario El Condor y capacitación a sus padres 2009-2010

    This study evaluated the nutritional status of children in the solidarity child development center "CONDOR;" surveys were applied to parents in order to identify children's food practices and establish a relationship with nutritional status. It was also carried out a trained on appropriate dietary hygiene habits that children should have. We performed a prospective descriptive study to know about this topic. 57 children who were attending to the center were evaluated under a nutritional assessment. 53% were well nourished, 21% had chronic malnutrition, 19% had acute malnutrition, and 5% were overweight according to the indicators W/A (under 2 years), H/A and W/H. According to the BMI results were normal in the 75% of cases, malnutrition got the 4%, potential risk of overweight the 19%, the 2% remaining were overweight and no one was obese. Daily and weekend calorie analysis were elevated by more than 50% of the population. Showing that despite of a high intake of calorie, malnutrition was founded in a considerable average. There was a low average of family parents who responded accurately to the survey questions at the moment of the training, but previously to the next event, this number raised considerably. Anthropometric indicators W/A, H/A, and, W/H were more accurate than BMI for this assessment.

    Evaluación nutricional a niños(as) del Centro de Desarrollo Infantil Solidario Totoracocha y capacitación a sus padres. Cuenca 2010

    This analysis has determined the Nutritional Condition of the children at the “Centro de Desarrollo Infantil Totoracocha” in Cuenca, the relationship with eating habits and parents capacitating. The research was done from January to July of 2010. As a descriptive and prospective study, it separated out of the 57 children from the center, to those under and over the age of two, to be classified according to the anthropometrics indicators. Consequently, to obtain the information a dietary survey was done, regarding: personal data, weight, height, nutritional diagnostic, pathological background, dietary supplements consumption, food intolerance, food frequency consumption during the week and Anamnesis during the weekend. As a result, the innutrition on the three levels is represented by 52,64%, 45,61% Normality and 1,75% of Overweight. Calories supplement during the week is 52,63% Normal, 38,63% Deficit and 8,77% Over consumption. Macronutrients consumption has an extreme use of proteins represented by 47,37%, carbohydrates 54,38% and 45,61% fat. Regarding the consumption of food during the weekend, the majority of children obtain a normal caloric supplement correspond to 70.17%, proteins 85,96 and fat deficiency 42.10%, Indeed, it is recommended for the parents to maintain a constantly nutrition evaluation to their children toward the necessities and age of each one.     Impacto de la intervención dietética en el estado nutricional del personal de los hospitales "Aida León de Rodríguez Lara" y "San Sebastian". Provincia del Azuay 2014

    OBJECTIVE: To assess the impact of a dietary intervention in the nutritional status of the "Aida León de Rodriguez Lara" and "San Sebastian" hospitals staff in Azuay province 2014. METHODS AND MATERIALS: A descriptive study was performed using a Intervention – Action component. The study group was integrated by the staff working at Aida León de Rodriguez Lara from Girón and San Sebastián from Sigsig Hospitals, prior to signing the informed consent. A previously validated Food Frequency Questionnaire was applied and used as an instrument at the beginning and at the end of the research to measure the impact,. Also, anthropometric measurements were taken and biochemical blood levels were determinate. The data obtained was analyzed using SPSS Statistics 20 and Microsoft Excel Software. RESULTS: The intervention with a Normal Diet in 47% of the staff allowed them to maintain their nutritional status. The intervention with a Hypo caloric achieved a mean reduction of 1.5 kg in 37% of the staff. Despite the weight loss, all of them still remain overweight and obese. Finally the intervention with the Dyslipidemia Diet achieved the 20% of the staff reduce their cholesterol and triglycerides levels, however only two of them normalized their levels.

    Ingesta de calcio en mujeres posmenopáusicas con osteoporosis que acuden a los hospitales Vicente Corral y José Carrasco, Cuenca, 2009

    Calcium is the most abundant mineral in the human body and is needed in large quantities because it has many properties, being better known for nourishing the bones. Objective: To determine and establish the intake of calcium in postmenopausal women with osteoporosis who come to hospitals Vicente Corral and José Carrasco of the city of Cuenca. Methods and Materials: We performed a descriptive study. The sample corresponds to 108 postmenopausal women with osteoporosis who go to hospitals "Vicente Corral and José Carrasco." Be evaluated calcium intake in food consumed daily by each patient by a survey of validated 24-hour recall for 3 days previously determined osteoporosis in postmenopausal women through an axial and femoral densitometry. For the statistical analysis used the software program and SPS FP2 and describe measures of central tendency, mean differences, percentages. Results: 97.32% of postmenopausal women with osteoporosis have a poor calcium intake. The average calcium intake was 530.18 mg / day, lower than that recommended by oms, while 1.79% of the respondents ate normal amounts of calcium and 0.89% of the people have a high intake. The 65.18% belonged to upper middle socioeconomic status and 46.43% had adequate nutritional status. Conclusion: In this present study, it has been a predominance of post menopause women with osteoporosis, with ingestion lower than 1200mg/day of calcium, in patients who used to go to the hospital “Vicente Corral” and “José Carrasco”.

    Mortalidad y su relación con el índice de masa corporal y terapia nutricional en pacientes ingresados en la unidad de cuidados intensivos del Hospital Guasmo Sur desde agosto 2020 a agosto 2021

    Worldwide, the prevalence of obese patients is increasing and represents 20% in intensive care units. This condition is associated with multiple diseases, more hospital admissions and risk of mortality. Objectives: To determine the prevalence of mortality and its relationship with the body mass index of patients admitted to the Intensive Care Unit of Guasmo Sur Hospital from August 2020 to August 2021. Methods: A retrospective cross-sectional analytical study was carried out in 348 medical records of patients admitted to the intensive care unit. Medical records that have sociodemographic variables, admission diagnosis, body mass index, nutritional therapy and APACHE II score were included, and medical records of children under 18 years of age and pregnant women were excluded. For the statistical analysis, the SPSS v21 program was used, descriptive statistics, such as frequencies, percentage, measures of central tendency (mean) and measures of dispersion (standard deviation), for association the chi-square was used, the prevalence ratio with an interval confidence of 95% and for statistical significance a value of (< 0.05). Results: An association was found between mortality and nutritional therapy (p=0.000). The BMI did not present data that had statistically significant influence on mortality (p=0.16). Conclusions: The percentage of mortality was 49.71%. Of these, 44.54% were overweight and 63.58% received enteral nutrition. Age, nutritional therapy, APACHE II scale, admission diagnosis and mechanic ventilation were related to mortality.

    Percepciones de escolares sobre sus hábitos de vida en establecimientos educativos de la ciudad de Cuenca, distrito 01D01, 2023

    Introduction: The study allowed us to know the perceptions of life habits in schoolchildren in the city of Cuenca, we managed to have a vision of what children know and do not know about eating habits, physical activity and consumption of mobile devices. Objective: The objective was to identify the perceptions of schoolchildren about their lifestyle in educational establishments in the city of Cuenca, district 01D01. Methodology: A qualitative phenomenological study was carried out, with individual interviews and two focus groups of children between 8 and 11 years 29 days of age year 2023, semistructured interviews were used. The total number of children attending was 28. Results: The results showed that the nutritional knowledge that the children had is general, there is no specific knowledge of the benefits and components of each food group, with respect to the practice of physical activity mostly occurs in school and weekends with the family; minimally perform extracurricular sports practice during the week; the use of digital devices is regular and for different purposes, mainly entertainment. Conclusions: The knowledge of the study participants is basic in the three categories addressed, therefore, it is important that specific education be carried out on different topics, including: importance of food quality and quantity, type of food and nutritional value, benefits of physical activity, consequences of excessive use of mobile devices.

    Prevalencia de anemia y factores asociados en la población infantil que acude a la consulta externa del Hospital Moreno Vázquez, Gualaceo 2014

    Introduction: The objective of this study is to determine the prevalence of anemia and the associated factors in the population of children who come to Moreno Vasquez Hospital, in Gualaceo 2014 Methods: This study was conducted with the analytical cross-sectional observation, to determine the prevalence of anemia by using this tool called HEMOCUE. A convenience sample of 545 children attended to nutrition department at Moreno Vasquez Hospital. Plus the pathogenesis of anemia associated with: lost weight, no breastfeeding, early or late complementary feeding, weaning, early attachment, low birth weight. Result: The study group included children aged 6 to 59 months, 51.2% were infants and most part of the study were women about 52.2%. The prevalence of mild anemia was 17.6%, moderate anemia 17.8% and severe anemia 0.6%, and the high prevalence was found among infants with the 44.4%. These group its association with age, weight, birth weight, breastfeeding, and supplementary feeding. Conclusion: The prevalence of anemia was 36%, this percentage stills being worrying, therefore it is necessary to promote nutritional education to mothers to encourage them to feed their child with food rich in iron, breastfeeding and a complementary feeding.
