Item Propuesta de aplicación de la cerveza artesanal ‘Golden Prague Premium Czech Lager’ en técnicas de pastelería y repostería de autor(Universidad de Cuenca, 2022-12-05) Orellana Fajardo, David Alfredo; Iñiguez Sánchez, Maricruz FernandaThis intervention project has been carried out with the purpose of elaborating a proposal of classic and modern pastry and pastry recipes, using selected varieties of the craft beer 'Golden Prague Premium Czech Lager', made in the city of Cuenca – Ecuador. The first chapter is focused on the craft beer 'Golden Prague Premium Czech Lager' and an analysis of similar styles of Czech beer is carried out in orderto obtain information to use craft beers in this project, it also contains the general study of beer: history, evolution, ingredients, brewing methods, classification and organoleptic characteristics, and the corresponding brewer terms are also explained. The second chapter explains the classic and modern techniques of pastry and confectionery in the elaboration of signature recipes of desserts based on craft beers, combined with other flavors that provide the ingredients of the preparations. The third and last chapter presents the gastronomic proposal of signature desserts of pastry and confectionery to a panel of experts with the aim of carrying out organoleptic evaluations, who verified that the signature desserts made with the varieties of craft beer 'Golden Prague Premium Czech Lager' are a viable proposal that guarantee flavor, aroma, quality and a pleasant experience, obtaining satisfactory results.
