    Determinación de los niveles de histamina en la especie Thunnus Alalunga, expendido en el mercado municipal ‘10 de Agosto’, Cuenca - Ecuador

    In this study the concentration of histamine was determined in fresh fish species Thunnus alalunga, samples for analysis were obtained at the municipal market August 10 Cuenca, using a total of 192 samples, they were analyzed with Veratox® kit for histamine by the ELISA method (Enzymelinked immunosorbent assay). It was found, after the study, that 18.7% of the total tuna samples analyzed had values higher than those allowed by the Food and Drug Administration (FDA), which refers to a permitted limit of 50ppm, indicating that certain Stalls do not meet the ideal conditions of conservation and maintenance of this product for marketing and could pose a risk to consumer health.
