This, due to the large amount of information and bibliography, which responds to the diversity of opinions and theories that have emerged over time. This was the main reason for the investigation, seeking to clearly define which components or guidelines process quality management needs. For this, an exploratory analysis has been carried out to cover the largest possible number of theories and models that currently exist around the concept of quality management. In order to achieve that goal, a global industrial approach is sought at first, then a local geographical area approach within the assembly industry of the city of Cuenca. Among the main results, it has been possible to establish the identification of the most used quality management models and therefore the guidelines with a higher frequency of application, in addition to the different benefits and challenges that quality management implies. This is due to a large amount of information that can be found in the existing bibliography, resulted from the countless diversity of opinions and theories that have emerged over time. Consequently, the difficulty to find a solid and valid pronouncement that serves as a basis to build a model of process quality management was one of the reasons to perform this work, intending to define which components or guidelines to be considered for management. With this goal in mind, a systematic literature review has been performed to cover most of the theories and models currently existing around the concept of quality management. This research covers a period of ten years, between 2009 and 2018, focusing on the industrial sector. Among the main results, it has been possible to establish the identification of the most used models of quality management, the most important guidelines, and the main benefits or challenges for the integration of a process quality approach within strategic management.Item Propuesta de aplicación de las enzimas de la piña y la papaya como ablandadores naturales de carne de res y cerdo en recetas innovadoras de sal(2017-12-20) Guacho Ayala, Anthony Steve; Rivas Páez, Raúl Israel; Sarmiento Arévalo, Clara AideeThe present intervention project has the purpose to analyze the tenderizers properties of enzymes: Bromelain present in pineapple and papain found in papaya, and apply them to cuts of beef and pork. These natural tenderizers were studied as an option for the treatment of meat genera, obtaining as a result the change in the organoleptic characteristics of low cost cuts and from exercised muscles of pigs and cows. Since piña and papaya can be easily obtained in the enviroment and both have a low economic cost, it is the intetion of this research to provide a practical gastronomic aplication, whether it could be professional or domestic, resulting in a great contribution to the production and preparation of food. Finally, a recipe book of twenty dishes based on naturally tenderized meats is presented, offering accesible and innovative elaboration alternatives.
