    Análisis del mucílago de cacao, para su aplicación en una bebida energética

    This project conducts research focused on the nutritional, organoleptic, physical and chemical components, pH and fructose level of cocoa mucilage; in order to create a formulation that allows us to produce an energy and / or refreshing drink, with natural components, focused on generating an alternative to the internal use of the product applied to the community. Thus allowing the community to provide a product that facilitates an increase in energy and performance in daily activities. The research work is divided into four chapters, where the first chapter explains the theoretical framework that analyzes the historical information of cocoa, its classification by shape and aroma, the amount of production and waste of mucilage in percentage to its cultivation. The second chapter describes the research on cocoa mucilage, its characteristics and nutritional properties, which will allow us to know the amount of carbohydrates, proteins, sugars among others, generating the basis of the research and facilitating the fulfillment of the third objective, which refers to the organoleptic characteristics of the product, which will be developed with the help of the Iche Research Center Manabí cuisine, which will accompany us in the research and development of the objective. The fourth chapter uses the knowledge and research developed in order to outline the formula, which empowers its application in a drink of rapid absorption, providing the energy that allows us to meet our main objective.
