This document presents an investigation on its gastronomic cultural importance and its contribution to the gastronomic identity of the region. Corn chicha is much more than just a mixture of fermented grains, it represents a significant link to Ecuador's identity, heritage and food heritage. Through its exploration into the country's heritage gastronomy, one can understand how this drink has become a symbol of resilience and cultural diversity. In Manabí, corn chicha is a very important drink in popular and religious festivities, its production and consumption are closely related to these celebrations, where it is shared with friends and family. In addition, this ancestral drink has influenced other cultural manifestations such as music, dance and crafts. The research carried out found different key points that can help verify the problem that exists with respect to corn chicha and its distribution at present, for which, 220 surveys were developed to verify its importance in Manabí. In conclusion, this document evidences the gastronomic cultural importance of corn chicha in Manabí and how this ancestral drink has endured over time as an important symbol for its gastronomic identity.
