    Gastronomía y Turismo en la fiesta religiosa del Señor de Girón

    It is known that traditions, festivities and gastronomy, as a whole, represent the values and identity of the peoples, which in turn allows to maintain in the memory of its inhabitants both their origin and their past, connecting the thought and beliefs of their ancestors with the current culture. In this sense, the present research work called " Gastronomía y Turismo en la fiesta religiosa del Señor de Girón ", aims to know the most representative culinary elaborations that are made during the festivity of El Señor de las Aguas. To this end, a methodology with a qualitative approach and information collection techniques have been used, such as literature review, participant observation, testimonies and interviews with representatives of the canton under study. Among the main results, it is that Girón has a wide variety of traditional culinary elaborations that are served during the six weeks that the investigated festivity lasts, so the tourist can know and taste each of them, as well as participate in the different activities that are carried out. It is concluded that, by rescuing the traditions and gastronomy of the Festival of El Señor de las Aguas, it contributes to preserving in the memory of the people the diversity that the canton has, as well as its cultural heritage.
