    Propuesta de mejora del proceso de producción aplicando herramientas de la metodología Lean Manufacturing en la asociación de “Artesanos de Productos Lácteos Fernandito”

    The Fernandito Dairy Artisans Association is dedicated to the production and marketing of dairy products, including yogurt, cheese, and other derivatives, produced in an artisanal manner with minimal technical requirements. Currently, there are no records on the analysis of production processes, which suggests a significant opportunity for the implementation of Lean Manufacturing principles. In this context, this integrative project has a non-experimental design with a descriptive scope, given that no variables were manipulated; instead, the production process was observed and analyzed. Information was obtained from primary sources through interviews and direct observation, allowing for the identification of specific problems affecting productivity. The results revealed bottlenecks, high turnaround times, and unnecessary accumulation of in-process inventories, which generate additional costs and decrease efficiency. The need to standardize procedures to reduce variability in the quality of the final product was also evident. Based on these findings, improvement strategies were proposed, such as optimizing waiting times, reducing waste, and implementing organizational and standardization systems.
