    Aporte gastronómico y patrimonial de la propuesta culinaria en la Calle de las Herrerías a la ciudad de Cuenca

    following research project deals with the importance of the gastronomic and heritage contributions of the gastronomic proposal installed in the street of "Las Herrerías" to the city of Cuenca. The history of the street is highlighted, its beginning, evolution, illustrious people and the process of adaptation to the environment that the activity of blacksmith has had, as well as the beginning, the evolution of the gastronomic activity, its main products and how today this activity adds to various axes within the city of Cuenca such as mainly the gastronomic, tourist, economic, social and cultural. In addition, there is the experiential account of the current era that the blacksmith shop lives, a gallery of various crafts that are no longer common to find, as well as the study of the factors that make the gastronomy of "Las Herrerías" have great relevance today, the importance of the two professions and what is the legacy it has to the citizens of Cuenca. It is foreseen the importance of establishing a gastrocultural route that motivates and encourages national and international tourists to get to know this place with great history and full of gastronomy that keeps the city of Cuenca.
