Due to the differentiated climatic factors that Ecuador has, the usage of pesticides and fertilizers has increased at an alarming rate, in search of increasing the productivity of crops, which results in an accumulation of residues in food and soil. In this study, the search for concentrations of metals and ions from fertilizers in four high-consumption products will be limited to INIAP Cecilia and Chaucha Amarilla potatoes, Kidney Tomato and Paiteña Onion found in markets and supermarkets. The metals were determined by using inductively coupled plasma spectrometry with a mass spectrometer (ICP-MS). For ions, through a UV-visible spectrophotometer. The values found were within the norm. Differences were found between the metal content of the potato between peel and pulp where the latter will appear at the highest concen - trations. Multivariate statistics showed that the samples are grouped by the planting site and not the type of sample, which shows the importance of the soil and the cultivation process. The generation of a classification model for fed products with the analyzed parameters is discussed.Item Generación de la línea base de nitratos y metales obtenidos de pulpa y cáscara de las papas chaucha amarilla e INIAP cecilia expendidas en el cantón Cuenca(Universidad de Cuenca, 2021-07-20) Alvitres Medina, Claudia Cecilia; Álvarez Blacio, Astrid María; Pinos Vélez, Verónica PatriciaIn this research, a baseline of metals and nitrates in the INIAP Cecilia and Chaucha Amarilla potato varieties marketed in the city of Cuenca, Ecuador, was carried out. Sampling points were determined based on the identification of markets and supermarkets in the city, and the concentration of nitrates and metals were evaluated in peel and pulp. The data obtained in the laboratory were compared with toxicity indices and it was determined that the concentrations were considerably lower than these indices and therefore did not indicate harmful health risks. Statistical analyses were performed using the free software R-Studio. In the inferential analysis, the means of both varieties were compared and it was obtained that Chaucha Amarilla variety had a significantly higher concentration than INIAP Cecilia in metals such as Co, Ni, Cs, Rb, Pb and Cu. In the multivariate analysis, the cluster showed the relationship between the places of planting: Ambato and Quito (INIAP Cecilia) versus Paute (Chaucha Amarilla), while the PCA showed the relationship between metals and places of origin.
