Through some sensorial test applied to a group of people, it was analyzed if the sodium chloride reduction and its replacement by alternative salt at canned vegetables would keep the same sensorial food characteristics on which common salt are used. The information provided by the acceptance tests rule helped to discard calcium chloride as a substitute for sodium chloride due to the low salting capacity and bitter taste. Triangular test were made after, it showed that panelists could clearly distinguish low sodium formulations and a formulation without reduction. Finally, an acceptance preference test was made to panelists in order to know their preferences to the raised formulations. Formulation of 100% sodium chloride was the most accepted one; however formulations with alternative salts were not unpleasant for panelists.Item Elaboración de procedimientos para prevenir la contaminación cruzada en la fábrica de embutidos La Italiana(2009) Saetama Guallpa, María Verónica; Alvarez Palomeque, Ruth CeciliaItem Evaluación de un compost maduro y su influencia físico-química en el cultivo experimental de brócoli (Brassica oleracea L.)(2014) Banegas Sanmartín, Diana Fernanda; Alvarez Palomeque, Ruth Cecilia; Guerrero Ortiz, Pedro Dionicio; Feicán Mejía, Carlos GonzaloThis investigation was conducted in the province of Azuay, canton Gualaceo, in the neighborhood of Bullcay of Experimental Stationbelonging totheAustroAutonomous Instituteof Agricultural Research (INIAP); for the implementationand evaluationof maturecompostandits physico-chemical influence on the experimental cultivation of broccoli (Brassica oleracea L.), based in a Design Randomized Complete Block with three replicates for treatment. The different treatments applied consist of compost developed and produced under similar conditions between them, especially in the content of their raw materials (mainly crop residues) plus the addition of different manures or excreta, such as: cattle, guinea pig, pig, horse, chicken mix of manure and chicken with inoculum, chemical and absolute control too; mainly analyzed physicochemical parameters, such as: pH, % organic matter and Cation Exchange Capacity, resulting values of pH higher than the point of starting (7,90) in all treatments, an increase of % organic matter from 0.59% to an average of 2.50%, having similar ranges in all treatments and in Cation Exchange Capacity presented values with major differences they began as a value of 27.41 meq/100 g of soil and these increased approximately 10 meq/100g in treatments that containing compost, takingthe maximum valuethetreatmentT5 with 39.20 meq/100g it is thecompost with chicken manure, and chemical and absolute control present lower values.
