Abstract: | The present work aims to create pilot recipes of vegan cookies that do not contain gluten and refined sugar in their composition, in addition to analyzing the acceptance of them in our environment. This proposal seeks to generate a product that expands the market for vegan foods and products for people with diseases linked to the consumption of gluten and refined sugar. A bibliographic investigation of the organoleptic characteristics of the ingredients traditionally used in the preparation of cookies has been carried out, as well as research has been carried out on the flours, sweeteners and fats that have been used for the creation of the new vegan, refined sugar-free and gluten-free recipes. On the other hand, the experimentation of recipes is carried out substituting and integrating suitable ingredients to meet the objective, for example; flours such as oatmeal, chickpea flour, almond flour, among others; oils such as olive oil and coconut oil; and natural sweeteners such as panela, coconut sugar, nuts, among others. Finally, a tasting test has been carried out in which a focus group of 10 people with knowledge in the gastronomic area and related to the subject meets to evaluate each of the recipes through a survey with assessment based on the Likert scale in which results are collected about the acceptance and criteria of the organoleptic characteristics of the cookies.

Description: | El presente trabajo tiene como objetivo crear recetas piloto de galletas veganas que no contengan gluten y azúcar refinada en su composición, además analizar la aceptación de las mismas en nuestro medio. Esta propuesta busca generar un producto que amplíe el mercado de los alimentos veganos y productos para personas con enfermedades ligadas al consumo de gluten y azúcar refinada. Se ha realizado una investigación bibliográfica de las características organolépticas de los ingredientes tradicionalmente utilizados en la elaboración de galletas, así como también se ha investigado acerca de las harinas, edulcorantes y grasas que se han utilizado para la creación de las nuevas recetas veganas, sin azúcar refinado y sin gluten. Por otra parte, se realiza la experimentación de recetas sustituyendo e integrando ingredientes adecuados para cumplir con el objetivo, por ejemplo; harinas como la harina de avena, harina de garbanzo, harina de almendra, entre otros; aceites como aceite de oliva y aceite de coco; y edulcorantes naturales como la panela, azúcar de coco, frutos secos, entre otros. Por último, se ha realizado una prueba de degustación en la cual se reúne un grupo focal de 10 personas con conocimientos en el área gastronómica y afines al tema para evaluar cada una de las recetas por medio de una encuesta con valoración basada en escala de Likert en la cual se recolectan resultados acerca de la aceptación y criterio de las características organolépticas de las galletas.
