dc.description | El constante crecimiento de la población a nivel mundial implica un aumento de la contaminación ambiental, debido primordialmente a emisiones atmosféricas, aguas residuales y desechos sólidos. Es por esto que se necesita un cambio en el modelo actual de economía lineal (de la cuna a la tumba) basado en la idea de usar y desechar, al modelo de economía circular (de la cuna a la cuna) que implica reducir, reutilizar y reciclar. Concretamente, este concepto de economía circular es aplicable al tratamiento de residuos de la industria alimentaria, siendo uno de ellos la cascarilla de cacao. Ésta representa entre 12 y 20% de la semilla de cacao y se estima su producción mundial en aproximadamente 700,000 toneladas por año. La cascarilla de cacao es un subproducto rico en fibras, antioxidantes y compuestos fenólicos y es un tipo de desecho alimentario que contiene diversos compuestos bioactivos que podrían ser empleados en el sector biotecnológico. Debido al aumento del consumo de derivados del chocolate y la inherente generación de residuos, en el presente proyecto se analizó el efecto de tratamientos de hidrólisis en la revalorización de cascarilla de cacao para la obtención de biomoléculas de interés industrial. Los resultados mostraron que los tratamientos de hidrólisis térmica permiten incrementar la extracción de compuestos bioactivos. Así, en ausencia de este tratamiento se obtuvieron, dependiendo del pH, valores entre 7.08 y 13.78 mg Trolox Equivalente/g residuo seco para la capacidad antioxidante y entre 4.02 y 6.08 mg Ácido Gálico Equivalente/g residuo seco para el contenido de polifenoles totales. dc.description.abstract | The constant growth of the world population implies an increase in environmental pollution, mainly due to atmospheric emissions, sewage and solid waste. This is why a change is needed in the current linear economy model (from cradle to grave), based on the idea of using and discarding, to the circular economy model (from cradle to cradle) that involves reducing, reusing and recycle. Precisely, this concept of circular economy is applicable to the treatment of waste from the food industry, i.e., the cocoa bean shell. It represents 12 – 20% of the cocoa seed and its world production is estimated at approximately 700,000 tons per year. Cocoa bean shell is a by-product rich in fibers, antioxidants and phenolic compounds and contains various bioactive compounds that could be used in the biotechnology sector. Due to the increase in the consumption of chocolate derivatives and the inherent generation of waste, this project analysed the effect of hydrolysis treatments on the revaluation of cocoa bean shell to obtain biomolecules of industrial interest. It was observed that the treatments of thermal hydrolysis allow an important increase in the extraction of bioactive compounds, so in the absence of this treatment, values between 7.08 and 13.78 mg TE/g dry weight for antioxidant capacity and between 4.02 and 6.08 mg GAE/g dry weight for total phenolic content were obtained at different pHs.
