| Abstract: | This technical degree project proposes the implementation of a microenterprise for the
production and commercialization of edible mushrooms (Pleurotus sp.) in the Cuenca Canton.
Edible mushrooms have gained importance in recent years with a growing consumption in
Ecuador, the production of these mushrooms comes as an alternative method for the use of
agricultural waste, thus generating employment in many areas of the country, being able to
produce a new agro-industrial activity to amortize poverty through food security, these
mushrooms are known for their high nutritional value and low production costs. For this
reason, a study was developed comprising three stages: market, technical and financial. In
the market study the acceptability of the product was evaluated through the application of 288
surveys in specific places of the urban parishes belonging to the city of Cuenca, with 92%
approval of the total population surveyed, in the second part the production system of edible
mushrooms was designed from the preparation of the inoculum to its commercialization, also
included the location and design of the infrastructure that will constitute the microenterprise,
finally in the financial study the feasibility of the project was calculated having a Benefit Cost
(B / C) of 1.29, and total investment recovery time of 3 years and 5 days. |
| Description: | El presente proyecto técnico de titulación propone la implementación de una microempresa
productora y comercializadora de setas comestibles (Pleurotus sp.) en el Cantón Cuenca. Las
setas comestibles han adquirido importancia en los últimos años teniendo un creciente
consumo en el Ecuador, la producción de estas setas llega como un método alternativo para
el aprovechamiento de residuos agrícolas, así generando empleo en muchas zonas del país,
pudiendo producir una nueva actividad agroindustrial para amortizar la pobreza mediante la
seguridad alimentaria, dichos hongos son conocidos por su alto valor nutricional y bajos
costos de producción. Por ello se desarrolló un estudio que comprende tres etapas que fueron
de mercado, técnico y financiero. En el estudio de mercado se evaluó la aceptabilidad del
producto mediante la aplicación de 288 encuestas en lugares específicos de las parroquias
urbanas pertenecientes a la ciudad de Cuenca, con un 92% de aprobación del total de la
población encuestada, en la segunda parte se diseñó el sistema productivo de las setas
comestibles desde la preparación del inoculo hasta su comercialización, también se incluyó
la localización y el diseño de la infraestructura que constituirá la microempresa, finalmente en
el estudio financiero se calculó la viabilidad del proyecto teniendo un Beneficio Costo (B/C)
de 1.29, y tiempo de recuperación total de la inversión de 3 años y 5 días. |
