| Abstract: | Foodborne diseases can be generated by the consumption of food after contact with
contaminated live and inert surfaces, constituting one of the main mechanisms in which a food
becomes harmful to the consumer's health. The objective of the present study was to carry out
the microbiological control of inert surfaces (chopping board, knife, plate, pot and well) and
live surfaces (hands) in the 27 February Market, located in the city of Cuenca, Ecuador. For
this purpose, a descriptive and cross-sectional study was carried out where samples were
collected from the premises that prepare and sell food. Samples of inert surfaces were taken
by the swab method, while for samples of live surfaces the rinse method was used and the
analyses were carried out at the Food Microbiology laboratory of the University of Cuenca.
Certain samples of inert surfaces showed values above the permitted limit for total coliforms
according to Peruvian Ministerial Resolution N°461-2007 MINSA, however, no Escherichia coli
growth was determined on any inert surface, resulting in full compliance (100%) with the
sanitary standard. In the case of live surfaces, the results showed total compliance with the
regulation for total coliforms, Escherichia coli and Staphylococcus aureus. |
| Description: | Las enfermedades transmitidas por alimentos pueden ser generadas por el consumo de
alimentos tras el contacto con superficies vivas e inertes contaminadas, constituyendo uno de
los principales mecanismos en el que un alimento se vuelve nocivo para la salud del
consumidor. El presente estudio tiene como objetivo realizar el control microbiológico de
superficies inertes (tabla de picar, cuchillo, plato, olla y pozuelo) y superficies vivas (manos)
en el Mercado 27 de febrero, ubicado en la ciudad de Cuenca, Ecuador. Para este fin, se
realizó un estudio descriptivo y transversal donde se recolectaron muestras de los locales que
preparan y expenden comida. Las muestras de superficies inertes fueron tomadas por el
método del hisopo, mientras que para las muestras de superficies vivas se empleó el método
del enjuague y los análisis se llevaron a cabo en el laboratorio de Microbiología de Alimentos
de la Universidad de Cuenca. Determinadas muestras de superficies inertes mostraron
valores superiores al límite permitido para coliformes totales según la Normativa Peruana
Resolución Ministerial N°461-2007 MINSA, sin embargo, no se determinó crecimiento de
Escherichia coli en ninguna superficie inerte, obteniéndose la totalidad del cumplimiento
(100%) para la norma sanitaria. Para el caso de superficies vivas, los resultados presentaron
un cumplimiento total de la reglamentación tanto para coliformes totales, Escherichia coli y
Staphylococcus aureus. |
