Abstract: | The presence of chemical compound acrylamide was discovered in 2002 and it was named as
an agent with a possible carcinogenic effect in humans, since that date several investigations
have been carried out on its formation in food, health risks and ways to reduce the amount of
acrylamide in foods that have a high risk of formation such as chips, coffee, and cereals. In April
2002, the Swedish National Food Administration (NFA) and researchers from Stockholm
University announced the discovery that this highly reactive, toxic, and potentially carcinogenic
chemical forms in many types of foods prepared/cooked at elevated temperatures.
The objective of this study was to conduct a bibliographic review on the toxicity of acrylamide in
coffee and potato chips by reviewing articles that were obtained from different digital databases
such as PubMed, Taylor and Francis, Scopus and Google Scholar, published from 2012 to 2022.
The development of this bibliographical review points out the different aspects that must be
monitored during the thermal process of foods such as coffee and chips, and considering the
health risks that acrylamide can cause, the need to maintain strategies to reduce this toxin in food
both industrially and domestically is affirmed. |
Description: | La presencia del compuesto químico acrilamida fue descubierto en 2002 y se lo denominó como
un agente con posible efecto cancerígeno en seres humanos, desde esa fecha se ha realizado
varias investigaciones sobre su formación en alimentos, riesgos en la salud y formas de reducir
la cantidad de acrilamida en alimentos que tienen un alto riesgo de formación como lo son las
papas fritas, café, y cereales. En abril de 2002, la Administración Nacional de Alimentos de
Suecia (NFA) e investigadores de la Universidad de Estocolmo anunciaron el descubrimiento de
que este químico altamente reactivo, tóxico y potencialmente cancerígeno se forma en muchos
tipos de alimentos preparados/cocidos a temperaturas elevadas
El objetivo del presente estudio fue realizar una revisión bibliográfica sobre la toxicidad de
acrilamida en café y papas fritas mediante la revisión de artículos que se obtuvieron de diferentes
bases digitales como PubMed, Taylor and Francis, Scopus y Google académico, publicados
desde 2012 al 2022. El desarrollo de esta revisión bibliográfica señala los diferentes aspectos
que se debe vigilar durante el proceso térmico de alimentos como el café y papas fritas, y
considerando los riesgos de salud que puede provocar la acrilamida, se afirma la necesidad de
mantener estrategias de reducción de este tóxico en los alimentos tanto de forma industrial como
en la doméstica. |
