Abstract: | Veganism is considered as a philosophy of life that rejects the exploitation of animals, creating a tendency to animal respect, thus making more people aware to opt for a plant-based diet, according to this an alternative gastronomy has been created wherein the use of ingredients of animal origin is excluded. That is why this intervention project aims to implement the vegan trend in pastry, making desserts free of animal origin products with a positive purpose mainly in aspects of health, and care for animals and the environment.
When making vegan desserts with wheat flours, almonds and unrefined sweet potato it is intended to replace animal products and their derivatives with plant-based options, and use unrefined flours to nutritionally improve the quality of the product, because an unrefined flour is one that retains all its components and thus its nutritional properties, creating a healthier dessert that can be consumed by anyone and that also helps those who do not have veganism tendency to become interested in trying vegan desserts, using more natural inputs.
In the interviews with professionals in the area of gastronomy different opinions on veganism were observed and whether unrefined flours are a good alternative to create pastry with healthier ingredients. At the same time, surveys were also carried out on 200 students from the University of Cuenca, College of Hospitality Sciences to know tastes and preferences and with this we can say that 90.5% of this group provide a great reception towards these desserts, even though only 1% is vegan. After the analysis carried out twenty recipes were created using wheat flours, unrefined almonds and sweet potato and six alternatives were selected for court tasting in which professionals expressed in the range of excellence, 94% acceptance in smell and cleanliness, 89% in flavor, 88% in color, 78% in presentation and 61% in texture, achieving a rating of 6.67/7 in the desserts presented. |
Description: | El veganismo es considerado como una filosofía de vida que rechaza la
explotación de los animales, creando una tendencia al respeto animal,
concientizando así a más personas a optar por una dieta a base de plantas, de
acuerdo a esto se ha creado una gastronomía alternativa en donde se excluye
el uso de ingredientes de origen animal. Es por eso que el presente proyecto de
intervención pretende implementar la tendencia vegana en la repostería,
elaborando postres libres de productos de origen animal con un fin positivo
principalmente en aspectos de salud, cuidado de los animales y del medio
ambiente.
Al elaborar postres veganos con harinas de trigo, almendras y camote sin
refinar se pretende sustituir los productos animales y sus derivados por opciones
de origen vegetal, y usar harinas sin refinar para mejorar nutricionalmente la
calidad del producto, debido a que una harina sin refinar es aquella que conserva
todos sus componentes y por ende sus propiedades nutritivas, creando un postre
más saludable que pueda ser consumido por cualquier persona y que también
ayude a aquellos que no tienen la tendencia del veganismo a interesarse por
probar postres veganos, utilizando insumos más naturales.
En las entrevistas a profesionales en el área de la gastronomía se observaron
diferentes opiniones sobre el veganismo y si las harinas sin refinar son una
buena alternativa para crear una repostería con ingredientes más saludables. Al
mismo tiempo también se realizaron encuestas a 200 estudiantes de la
Universidad de Cuenca de la Facultad Ciencias de la Hospitalidad para conocer
gustos y preferencias y con ello podemos decir que un 90,5% de este grupo
brindan una gran acogida hacia estos postres, a pesar de que solo el 1% es
vegano. Luego del análisis realizado se crearon veinte recetas utilizando las
harinas de trigo, almendras y camote sin refinar y se seleccionaron seis
alternativas para la degustación del tribunal en el que los profesionales
expresaron en el rango de excelencia, un 94% de aceptación en olor y en
limpieza, 89% en sabor, 88% en color, 78% en presentación y un 61% en textura,
logrando una calificación de 6,67/7 en los postres presentados. |
