| Abstract: | This thesis aims to help the restaurant located at Simón 7-84 in the center of the city of Cuenca to establish strategies that will allow to improve its current situation, since its establishment inaugurated two years ago by which is found in a cycle of investment recovery. Also taken in count that the company does not have an established organizational structure that allows to know its partners, employees and clients, and which are their objectives and goals to achieve as time passes by; as well as marketing plans, financing and operational plans that allow to make the most of your capacity, both its assets and its employees.
That is why through the application of a Business Model we will develop administrative analysis tools-strategic - functional as the Strategic Planning, the Canvas Model methodology and the Balanced Scorecard Management System, among others; in order to guide partners to strategies that help the establishment to obtain a competitive advantage that allows them to generate added value to the service they offer, capturing and keeping their clients captive, strengthening and consolidating inter-institutional alliances of a tourist nature; besides the establishment of marketing and financial tools that allow to increase sales and cover costs and expenses. At the same time, the value chain is identified, analyzed and defined in order to achieve better expectations about our product |
| Description: | El presente trabajo de titulación tiene como objetivo aportar al Restaurante Simón 7-84 ubicado en el centro de la ciudad de Cuenca a establecer estrategias que le permita mejorar su situación actual, pues es un establecimiento inaugurado el 21 de octubre de 2016 razón por la cual se encuentra en un ciclo de recuperación de inversión. Además, que la empresa no cuenta con una estructura organizacional establecida que dé a conocer a sus socios, empleados y clientes cuáles son sus objetivos y metas a cumplir con el paso del tiempo; así como planes de mercadeo, financieros y operativos que les permita aprovechar al máximo su capacidad tanto de sus activos como de sus colaboradores.
Es por ello que mediante la aplicación de un Modelo de Negocio desarrollaremos herramientas de análisis administrativo – estratégico - funcional como la Planeación Estratégica, metodología del Modelo Canvas y el Sistema de Gestión Balanced Scorecard, entre otros; con el fin de orientar a los socios a estrategias que ayuden al establecimiento a obtener una ventaja competitiva que les permita generar valor agregado al servicio que oferta, captar y mantener a sus clientes cautivos, reforzar y consolidar alianzas interinstitucionales de carácter turístico; además del establecimiento de herramientas mercadológicas y financieras que permitan incrementar ventas y cubrir costos y gastos.
