Abstract: | The main goal of this study is to detect the presence of antibiotic residues in meat originating from Azogues Municipal Slaughterhouse in a sample of 189 animals. The qualitative microbial test “Premi Test” which determine the presence of 30 types of different antibiotic substances was applied. The results show 155 positive cases, that represents 82% of the total sample. Additionally, the overall prevalence of drug residues unvaried considering the following variables: sex, age (higher and less than five years old), origin (Cañar, Azuay, Morona Santiago and Loja), race (beef pure and cross-bred cattle) and condition (emergency slaughtered calves and apparently healthy ones) was evaluated. The results indicated that the cattle presents antibiotic residues in all the cases. The chi-square test was not significant respect the relationship between age and prevalence variables. We can conclude that the beef presents antibiotic residues independently of the variables, then the meat distributed do not comply with regulatory. Finally, is very important to carry out this type of studies in all the slaughter and distribution places, in order to control this condition and to take appropriate actions to ensure beef safety for consumers |
Description: | El objetivo de este estudio es determinar la presencia de residuos de antibióticos en bovinos faenados en el Camal Municipal de la ciudad de Azogues en una muestra de 189 reses. Se realizó la prueba microbiana cualitativa “Premi Test”, que permite detectar valores que superen el límite máximo de residuos de treinta diferentes tipos de antibióticos en carne. Se obtuvieron como resultados 155 casos positivos, lo que corresponde el 82% del total de la población que formó parte del estudio. Se evaluaron además resultados con respecto a las variables: sexo, edad (mayor y menor a cinco años), procedencia (Cañar, Azuay, Morona Santiago y Loja), raza (con y sin mejoramiento genético), reses con faenamiento de emergencia y aparentemente sanos. En todos los casos se presentaron altos porcentajes de muestras positivas. Por la prueba Chi-cuadrado se demostró que no existe relación estadística entre las variables edad y la prevalencia. Se puede concluir que las reses en este camal presentan residuos de antibiótico en todos los casos, independiente del sexo, edad, procedencia, o manipulación genética. Esta cifra indica que la carne que se está distribuyendo no cumple con los estándares. Finalmente es importante realizar este tipo de estudio en todos los lugares que faenan y distribuyen carne para evaluar el estado de la misma y tomar acciones para garantizar ganado sano a los consumidores |
