Este hermoso cantón La Troncal posee una gran variedad de flora y fauna, diferentes atractivos tanto naturales como culturales; y, todo ello crea un sector netamente turístico. Al ser una tierra dulce y por tener al ingenio COAZUCAR ha hecho que este mágico cantón sea considerado como un destino turístico reconocido por la hospitalidad de su gente y su delicia gastronómica. Por consiguiente para el tema propuesto se efectuó y analizó cuatro secciones: Sección 1: El Turismo gastronómico a nivel mundial, nacional y local. Sección 2: Los diferentes platos típicos del Cantón La Troncal. Sección 3: Ruta Turística Gastronómica en la zona La Troncal – Cochancay, Provincia del Cañar. Sección 4: Puntos de vista, análisis crítico, argumentos del contexto y reflexiones dentro del ensayo. Cada una de las secciones fue analizada desde una perspectiva constructiva desde lo macro a lo micro que permita demostrar todo lo bueno que tiene la gastronomía ecuatoriana y a su vez del Cantón La Troncal.This research work aims to analyze the feasibility of creating a culinary tourist route in the backbone - Cochancay, it is located in the coastal area of the province of Cañar.
